For those non Indians... Rava is Semolina (granular durum wheat flour, not the powdery kind). Semolina is made from mature and hardened wheat flour which is ground up in a granular consistency like Cornflour. Dusting soft flour or maida (Hindi) is made from softer younger wheat. Semolina or Rava always gives a crispy texture to the food, whether as a fried coating, or in dosas, or in muffins. In muffins and in Suji desserts, it has a lovely granular texture, and holds moisture well. Of course for those that have gluten allergies or sensitivities, avoid this and use cornflour instead. Wheat is hard to digest for anyone and should be had in moderation or avoided. Despite its lovely taste!
