Healthy Vegan Stuffing Balls - Goodbye boring lentil loaf!

- Ho Ho Ho boy do I love this recipe.. These healthy, delicious, plant-based stuffing balls are tender and perfect and delicious for any holiday table. Not only are they oil-free, but in my opinion, they just knock the socks right off the regular ol' lentil loaf.. and they're easier to make! It's a win-win. Check out the recipe below and give these balls a shot!

~*~ RECIPE ~*~
INGREDIENTS
1/2 bunch stemmed kale
5-6 mushrooms, diced
3 celery stalks, chopped small
1 small yellow onion, diced
1.5 tablespoons minced garlic
1/2 teaspoon thyme
1.5 teaspoon rosemary
1 teaspoon oregano
1/3 cup dried cranberries, chopped
1/2 cup oats
1 tablespoon ground flax
1.5 cups cooked lentils
1 cup walnuts
1 tablespoon apple cider vinegar
Bake for 45 minutes at 360°. They might need a little longer. They will firm up a bit as they cool.

I made these tonight and they were delicious! This recipe is a keeper for me. The cranberry relish is delicious too. I didn't have an orange or orange juice so added juice of one lime. Oh wow...so good! Thank you 👍

I made this recipe today because for some reason the flavors of thanksgiving sounded good to me. They are amazing! This recipe is perfect. I plan to use it throughout the year and just change the herbs in line with whatever my Craving is it the time.
I made them into patties or burgers instead of balls.

I am allergic to peanuts AND walnuts as well as other nuts. It is always a challenge to adapt recipes as I am a newbie to WFPB. I am half afraid to eat lentils and legumes although I can eat green peas without an allergic reaction.
The challenge is just in figuring it all out. Once you know what you can and cannot eat, it will be a breeze. Use January to really nail down 10-20 recipes and those will be your forever recipes. Of course you can adapt those into a million other combinations eventually, but for now focus on just 10. You can do it even with food restrictions. Reebs is of gluten AND oats, so that is a big one, and we are doing fine.
Can you blend the nuts? I don’t have a food processor but I have a vitamix
Yes just pulse them for a split second at a time so they don't clump

I cook organic CA rice, and I cook it like pasta. There is no arsenic risk this way.

An idea for your business: when I was in St Maarten last year, I went to a market and bot a box (not unlike Uncle Ben’s Converted Rice) and it contained 2 sachets of lentils.... pre-cooked, I guess (to some degree)....all I had to do was boil some water in a pot, through in a container and 10 minutes later drain....voila ...lentils. Can’t find a similar product in the US. Not sure why. Legumes are growing wildly in popularity and are here to stay.
Trader Joe's has precooked lentils just like you described. Do you have a Trader Joe's market near you?
I don’t have kale at the moment and don’t want to go to the store. I do have some spinach. Do you think spinach might work in a pinch or would it be too mushy?

I had used flakes quinoa but you can use rolled oats too
If you’re fat/oil free could you sub out the walnuts with mushrooms for flavor?
Try some tofu, but that is not fat free. You could try white beans, but it won't be the same at all.

@@desertbluecatnm Gonna go a little more daring and suggest ground coriander seeds. Will impart a unique flavor profile. Would have to experiment with how much. Would also garnish with a yumm sauce and raw red onion slivers. Enjoy.

I am gonna sound like a douche here, but been watching your past videos, 3 years ago.
Then you have a video about counting calories, encourage not to count them, but just mind the macros and stay away from fat.
Vegan or not, you still have to be mindful and not to overeat to stay lean.
Sorry again, but you have been gained a fair bit of weight since i started watching your videos,.
Did you do it on purpose? Are you trying to bulk up?
I have been trying successfully for several years to gain weight and bulk up. When I first started, I took out the oil and dropped 30 pounds (had no muscle at all at the time). Since then I have gained the weight back by eating all whole food and working out. My workouts have not been so good for the last month so I am starting to get skinny again. Here comes that January challenge!
Good luck! Motivation doesn’t come easy sometimes, hope you can reach you goals. More power.
