*Recipe* 4 large eggs 1 1/2 cups whole milk 1/2 tsp. salt 1 1/4 cups flour 4 tbsp. vegetable oil (butter, lard or beef drippings) Combine eggs, milk, flour and salt. Blend until well combined and pace in the refrigerator, allowing to rest 30 minutes. Preheat oven to 425°F. Put 1 teaspoon of the oil (or beef drippings) into each section of a 12-hole Yorkshire pudding tray or muffin tray and put into the oven on the top shelf until very hot, almost smoking. As soon as you take the tray from the oven, pour in the batter to three-quarters fill the tins (it should sizzle) and immediately put back into the oven. Bake until the Yorkshire puddings are well risen, golden brown and crisp, 15 to 20 minutes. Don't open the oven door until the end or they might collapse.
The joy Gordon shows while cooking makes these videos so good. It’s like he is humbled by the goodness of the things he cooks and cooks with. I love it.
As an American with a fondness for British T.V., I always wondered what these were and when I would see them on tv and think they reminded me of dinner rolls. When I see them made, it reminds me of what my grandmother used to make. She called them “popovers” and they are made in a very similar way with the hot oil. I think she used eggs for those as well but maybe less of them, they tended come out more bread like and these look more custard like. We used to serve popovers with Sunday dinner.
Yorkshire puddings are actually a skill to master, 100% agree that the oil needs to be smoking. You can also make them rise twice as high by putting a quarter cup of water into the mix and only filling 1/3rd of the way
Noooooo, not water. Won't taste as good. And use beef fat. NOT oil. If you can't get your hands on beef fat use lard but never oil and definitely not margarine or butter.
The happy Ramsey family I love these videos, I miss all the funny moments and not so funny moments in the kitchen with my daughter . Her passing has left a big gap, but you guys put a smile on my face again. THANK YOU

FYI it's equal volume of each. So just crack whatever amount of eggs you want to use into a measuring jug and note where the line comes up to, then fill the milk up to that line, and the flour.
I've heard that before, but they usually come out flat and stodgy if I do it like that. Also, he seemed to use a lot more milk than eggs. I made some last week using 200mg flour, 250ml milk, 4 eggs, a pinch of salt and baked using sunflower oil preheated at 200c. They came out just like they did in this video.
