My family has a recipe for tomato sauce without any sugar, and it's always so odd to hear sugar in any tomato sauce recipe. Call me weird, but i think it'll always be better if you slow cook it and let the natural sugar from the tomatoes sweeten the sauce instead of using sugar.

Some specific dishes like carbonara are young, that's true, but most regional dishes aren't. They're just not very famous outside of Italy because everyone just wants pasta and pizza.
Worked at the Hut and that is 100% how it's made. They have a pan the dough proofs on that makes stretching it and then folding over the cheese sticks easier but that's all. Josh nailed it.
