Another famous movie I believe Rockstar took inspiration from fir a GTA V mission, is The Italian Job (mostly the original movie starring Michael Caine, but I guess some influence from the American remake) influencing the big con approach to the the final heist known as the “The Big One”… in which both revolve around criminals stealing millions worth of gold bars and escaping in modified getaway cars that rendezvous in the back of a truck/ bus. GTA using the Bravado Gauntlets whilst the The Italian Job used Mini Coopers.
GTA San Andreas has reference to Menace II society, the soundtrack, the pizza restaurant where Ryder tries to rob & the employer says I feel sorry for your dad, in menace II society is a Korean guy that says I feel sorry for your mother. The npc with dreads looks like o-dog big smoke reminds me a bit of Stacey, CJ a bit like Caine, Ryder as himself mc eight. The ballas has reference to the guys who killed caines cousin Harold.
Also Three Leaf Clover was quite inspired by Heat as well. The suits, the masks, etc., even when Eugene Reaper kills St. Michael is based on a scene from the 1991 film Point Break where one of the hostages kills a bank robber before being murdered himself. That also could be for the Pacific Standard Job as well. Also Breaking the Bank at Caligula's in GTA SA is noticeably similar to, and may possibly be inspired by, the 2001 heist film Ocean's Eleven.
The Speed reference was also featured in a mission in the original GTA (the OG top down version). There was a mission where you had to drive a bus which would detonate if you stopped or drove too slow.
Michael is dressed exactly like De Niro in Heat with the grey suit. You can even get the hairdo and the goatee. His family dynamic with a criminal who sees a therapist mirrors The Sopranos. The entire washed out look of GTA4 is supposed to emulate HBO shows like The Sopranos, The Wire, and Oz.

I absolutely despised that movie Heat. Like seriously, all the bad guys just bit the dust in the end, except for one lone survivor. It would be so much cooler to watch a crime flick where the bad guys actually outsmart the cops and successfully make their grand escape.
I haven't seen The Fate of the Furious but I am aware of the scene where the submarine breaches out of the ice. There is a robbery heist in the new Salvage Yard DLC (The McTony Robbery) that features a kosatka sub beaching itself in a similar movement. I don't know if R* was making a deliberate reference but it feel very similar, cinematically.

Whenever i replay the game i always pick Mini's during the setup. I was disappointed you can't use them just replaying the mission

IIRC, there is an achievement you can get that specifically references the movie if you select the hockey masks in the lead up to the mission.
