I'll always remember being her pivot person in the kitchen. Many recipes I remember by the ingredients I handed her. My father passed away almost a year ago he was 94 and missed 95 @ 2eeeks. And I’ll tell you what , that old man burned in that kitchen til his final day. He was a good man and a damn good cook. People have said he same about me but I never took it to heart. But the day my father told me that he didn’t know where I got it from but he loved the way I seasoned meats it gave me a joy that infused my soul. He was a good man but a hard man. He didn’t give out compliments lightly. Then he would brag on my cooking to his 8 brothers who were equally good and hard men and great cooks to boot. Family you just don’t know how much that meant and still means to me. I am so glad that my heroes weren’t movie stars or athletes. I had every thing I needed right at home.

Pork steaks were among the first meat dishes Mother taught us to make as young children and her recipe is still a huge crowd-pleaser. Marinate pork steaks 1 to 1.5 inches thick with an overnight rub, then brown them in seasoned flour the next day. After browning, layer the pork steaks thickly and evenly between each one with lots of skin-on cored sliced apple, sliced fresh garlic and light brown sugar. Bake slowly in a deep covered casserole for 2+ hours, or until fork-tender, depending on the steaks' thickness. A lot of delicious natural gravy will be made. Serve with baked, buttered sweet potatoes or steamed jasmine rice and a green vegetable or chef's salad. Optional beverage: Anything carbonated or apple cider. For dessert: Lemon meringue pie and hot tea or coffee.

Pork steaks awesome awesome. Very under rated cut of pork. My grandmother always pan fried them with salt and pepper and they were always so good. I've fried them, BBQ them on the grill or baked you can't go wrong! I keep a stock of those in my freezer!

Pork steaks awesome awesome. Very under rated cut of pork. My grandmother always pan fried them with salt and pepper and they were always so good. I've fried them, BBQ them on the grill or baked you can't go wrong! I keep a stock of those in my freezer!
