Possibly the same way Dorne fought Aegon: hide in woods and mountains, using guerrilla tactics and the harsh terrain to attack wherever the dragons weren't, and hiding whenever a dragon appeared. The North is like 3 times the size of Dorne and Daenerys has 3 dragons but only one dragonrider, plus the Starks have 3 wargs (well, if Bran comes back) that potentially could cause some issues to the dragons.
