    This becomes so helpful now where yeast runs low in our supermarkets in germany. Just saw this in the newspapers and now on youtube but 6 years old

    Lovely video. Actually I used dates cut into small pieces instead of raisins. The result was just great and dates are a lot cheaper than raisins. In fact, in India the temperature currently is so hot that the fermented water got ready in 30 hours!

      In the USA, raisins are much cheaper than dates. But, I think many raisins and other dried fruits in the USA are treated with sulfur to prolong shelf life and that almost certainly will affect yeast.

    I usually use beer to make bread when I can't get yeast. Beer has yeast and makes wonderful baked good, you can't taste it at all. I have Christians staying with me, and they won't eat foods made with beer, so I'm looking at other ways to make yeast. There's no yeast in the markets since the CoV lockdown. I can't wait to try this raisin yeast water! Thanks!

      Did it taste fruity or like raisins? And how much of the yeast water did you add? Equal to the amount of dry yeast your recipe called for or more?

      Rosina Pansino I strained out the raisins, added equal parts yeast water and flour to make a sourdough starter.

      Rosina Pansino it called for sourdough starter :-) I was looking for a way to make a sourdough starter without having to discard so much flour.

    Hi mate, I'm french and I worked as a pastry cook and my baker co-workers always told me to never close hermetically the jar when you do this kind of stuff. Even though it seems to work just fine for you :D. Nice video !

      That is right. You should not close the jar tight as the pressure build up from CO2 could explode the jar. It has happened to an artist friend of mine. He prepare some flour paste and keep it tightly closed in a glass jar. It is not the yeast water shown here but the process is the same because fermentation occurred. One day as he opened the jar the glass just exploded. He was surrounded by students and he said it was so fortunate that no one got hurt that day.
      One common practice is to close the jar as normal and then turn back half a rotation. The lid should be loose enough to rattle.

    Did you use two types of dried fruit? And I tried this only added raisins but added some honey found it more helpful with the acidity put in the starter and worked beautifully thanks for your idea 😊

      I started making sour dough about 2 or 3 weeks ago and the sour taste doesn't taste good in _all_ recipes. Does this dough starter have a sour taste?

    Just baked baguette using only raisin ferment. Definitely gave it a more complex flavor. I think my dough had too much water. After rising and rising, it didn’t really grow much in the oven.

    I placed nice overripe strawberries in a quart jar and filled it 3/4 ways to the top with water then put a lid on it before placing it on top of the frige until the strawberries all floated and the water fizzed -it only took 24 hrs. I Strained off the strawberries and kept the fizzy water to which I added a cup of flour and cup of sugar and stirred it good before putting a loose fitting lid on it and placing it back on top of the frige to ferment some more. Its not done much of anything 8 hrs later. It still smells like strawberries. I took off the lid a couple times and shook it good but now I've placed a coffee filter on it secured with a rubber band so it can get more air.I'm crossing my fingers the starter takes.

      Basically any fruit that has a natural white powdery coating on the skin. The powdery thing is actually yeast.

    Yeast and molds are aerobes...they need air. So I think I would not tighten the lid on that jar.

      @@peacefulcuisine A few years ago, I saw online a recipe for feeding plants that used fruits peels - I used banana or pineapple- and it got bubbly and like a vinegar a bit. So, I think testing on various peels might be a good idea. There are muscadine grapes and natural grapes that have very tough peels that might be less wasteful than throwing away the peel after making juice/wine or eating the inside.
      I wonder if kiwi peels could be used - especially the smooth kind - or potato peels.

    Question. The time it took to make a raisin yeast starter, couldn't you make a sourdough starter in the same time and it would be better for making bread; since it's yeast bred for eating flour?

      You are right. But for a Rye bread you also need to use yeast plus the sourdough.

      Jane Isadora if you use the flour and yeast water in first stage, it does taste a lit bit of it but its vivid, almost like you had to concentrate on your tongue to taste te raisin flavor.. if you move to stage two which mixing it again with another grams of flour and water, it's like nothing of it.

    Do you use tap water or after boiled water? I have tried and failed, not sure why. The raisins just remained stale and not fermenting.

    Hi, I'm on Day 7 now, no mold. But the raisins don't float all up like yours and no bubble's sound. Raisins all puff up and distribute evenly from top to bottom. I used gold raisins.

      Agnes Lee yes, but make sure there’s some white coating on the cranberries which indicate the existence of wild yeast. The more there is, the higher chance you will succeed

      I put a cup of water in my microwave, nuke it for 2 minutes, open door and place yeast water inside quickly. It will stay warm for quite awhile...when in the kitchen for anything, remove jar, warm cup, replace jar...need the microwave? Remove both, nuke what you want and then go back to step 1...takes seconds, keeps out of drafts and holds the warmth necessary for the yeast. It's also out of the way.

    Hello. I really love you posts. Thank you! I have a small home baking part time business baking bread. Normally i use commercial yeast but have been hearing about the benefits of natural yeast and would like try making it. I really need help with the quantities as i have to make 30 whole wheat loaves of bread each day. Help! How do i start? because that would mean 3kgs of starter per day. Can you help me? Please?

    straining the water on about the second or third day and drinking it makes for a grate kidney detoxifier. real good for the kidneys

      Yes it works perfectly and you can still use the fermented fruits to bake or just to eat them right away.

    Is any kind of dried fruit possible to make natural yeast apart from raisins? Such as dried cranberries, golden berries, blueberries, figs or apricot....coz some of them are sour, I wonder wether the dough will also be sour....thanks

      you can make natural yeast from all of the food you mentioned in your comment. but I think the bread wouldn't be more sour than you think.

      You can use any kind of fruits, vegetables or herbs. I like to use tomatoes and dates. It is very easy. Have you tried it yet?

    Hi hi, my raisin mixture has a lot of white mold floating on top the 3rd day. Do I just sieve out the mold, or do I throw the whole thing away?

      Woonie Tan Go to 2:01 in the video, he said that this is normal if white mold grows on the SURFACE. Take it off and keep going...IF, however, there is white mold inside (he says "and you can't remove them all") and it starts smelling badly you have to start over...

    I think you can prevent mold most of the time by adding lemon juice.
