      Hi Matthew, made the sugar cakes on Friday! They are the best I have ever made and I let them (15) sit on a plate to harden up which they have and the texture is even better today. Thanks again for your recipe. Will continue to make it…now I just have to watch my blood sugar levels…lol Keep up the excellent vlogs.

    So far the best recipe. Looks delicious. Not many people patch their coconut. Definitely Guyanese style. I will try it.

      @@matthewsguyanesecooking4601 Matthew. First I must compliment your version ofsugar cake but as a Guyanese i have seen anyone parch the coconut and add milk. Parching would make it dry, that's why you are adding milk. There us brown sugar cake, no coloring and coconut ice, the colored ones like pink and white, etc when the back is removed from the coconut, white sugar and clear essence is used.

      Matthew's Guyanese Cooking my method is the same as Natasha.I was wondering that if parching would affect the natural coconut taste.Happy thanksgiving Matthew to you and your family

      The parching actually brings out the coconut taste and changes the texture of the coconut a bit. Have a happy thanksgiving too!

    Hi Matthew, Have you ever try putting your sugarcakes on banana leaves?
    It gives out another flavor to it.
    It's a longtime thing when people could not afford to buy baking utensils.

    Matthew, can I use brown sugar instead of white? If so, any alterations to the ingredients and amounts?

      Yes you can use brown. They may come out chewier because of the molasses in the brown sugar. No difference.

    Hi Matthew! Your recipe looks great and I would like to make this for our son Matthew who is in the Navy. I will be shipping this to him. I was wondering if it would be ok to place in a box for shipment. It will probably be about a month before my son receives it. Your thoughts?

      Yes you can put them in a zip lock or Tupperware. And it should ship well. You can individually wrap them in plastic wrap

      I have never gotten that technical with it. The longer you boil it the more crystallized it will get

      Any of the Indian stores on Liberty usually have the powder. I don't recommend going out during these times though. You can buy gel coloring online which works well too. You can use liquid but be careful because it can get bitter

      Sabrina Madray You can use the package one. You may have to lessen the sugar if the package one is sweetened though. You can find it at any Indian or West Indian Store.

    I will try to make this minus the milk. I have seen brown sugar with water and spices reduced to a candy paste the I will put toasted coconut in.

    I made this flavour great but it setting all night still soft 😢😭

      You have to keep boiling it until it is almost dry so this way it doesnt stay soft. It takes practice. I'm gonna come up with some more tips to help people with this.

      I had same problem. Taste great but soft. I did not continue mixing it around after I took off fire so I think that’s the issue. The finishing technique is similar to fudge.
