Hi, you dont need to boil, you need only to deep fry first for about 5 mins then transfer in a sift to drain, put sugar in the cooking oil to caramelize (heat is in medium heat) when sugar caramelized then add the fried Sweet potatoes stir until cooked and caramel incorporated then remove from pan and served.

Hi Sir, do not use orange Kamote or orange Sweet Potatoes because it very juicy i mean it has many liquid inside, use the gray or Yellow because it has less liquid and cook it longer to make it crispy but do not burn.

hnd po red potato gamit ko dito mam, yellow po na kamote kc un ang masarap gawing kamoteque. ganyan po kc ang nakagisnan kong paraan sa pagluluto ng kamoteque mam. kung lalagyan ng tubig ang asukal magtatalsikan po yata sa mantika.
