    nice to see that the sweet potatoes are the same we get here in Brazil, purple skin and a soft white interior with a chestnut thing going on... Aroud here we dont do this kind of preparation, sometimes we make sweets or cakes but most of the times is fried or boiled and usually, is an acoutrement for savory dishes.

    Everyone watching this really should buy Maangchi's Big Book of Korean Cooking, I have recipe books that I have never opened, but this one I cannot close! (It's currently open on haemul-pajeon, which I made this evening). The recipes are clear, easy to follow, contain practical tips and have multiple images to show you each stage of the process. BY FAR the best cookbook I have ever owned!

    This is also very popular in China. Instead of being served after cooling, it's served hot in China, and the syrup is not that caramelized. Therefore, when you stretch with your chopsticks one piece of sweet potato, the syrup will form a silky line. It is called 拔丝(basi) in Chinese, which literally means stretchy silk. In China, this dish is also quite popular and is served with a little bowl of cold water to prevent burning your mouth. What's more, to prevent it from sticking to the plate, a little layer of oil or white sugar is usually sprinckled to the bottom of the plate.

      Yes, this dish was actually presumed to have been introduced to Korea by the Chinese diaspora and first served by the hwagyo (Korean for huaqiao) restaurant owners! When my mom used to make this at home, she just tossed the fried sweet potatoes in honey to keep it simple. I should try this crunchy version soon :)

    Oh! I think we have a similar version of this in the Philippines, particularly in the nothern portion Luzon (Ilocandia region), we call it "Kinalte or Inkalte". I really love your headdresses, Maangchi!!!

    We also have that in Philippines. We call that kamote cue and put it on a stick like barbecue. Kamote is tagalog of sweet potato.

    Something similar here in the Philippines, we call it kamote que, ( usually skewed with bamboo sticks like barbeque) but sweet potato and sugar fried at the same time in hot oil.

    In India we make similar dish. There is a small difference that instead of frying we cook them directly in pan and we add sugar while cooking so it tastes sweet and soft.

    This is very very similar to what is called "camote cue" here in Philippines, it is dip in brown sugar first before frying, then put in sticks, it's a very typical street food, camote is more used term here for sweet potato in general.,

    I had a similar version when I was staying at a hotel in Gangnam except they candied tater tots instead. I thought it was weird but I decided to try it anyway. It was so good!! It was a little chewy from the sugar but sweet and savoury at the same time. Didn’t know the real deal was mattang.

    I tried to make this few years ago for my husband, because of my memories of enjoying this as a school kid in Korea. but my sweet potato ended up being very crumbly and a bit like like sweet mashed potato. It was disappointing, and I decided that this dish is too hard to make it and haven't made it since. But I should try making it again following Maangchi's instruction. I'm sure my husband and my kids are gonna love it.

    This is also a famous snack here in the Philippines. We call this Kamote-que. Sweet potato is called Kamote in Filipino and Que part is because we put it in bamboo skewers like Filipino barbeque. 😂😋❤🍠

    I burst out laughing when you said after eating snacks with your friend then went home, you still ate dinner, me too. But believe me, I was so skinny when I was young even if I ate a ton. But now at me 30s, I gained weight just from breathing. But still eating is a part of our life ~. I also tasted this mattang at Korean Nearby and so curious how they made it. Sweet potatoes here (in indonesia) mostly have an orange color inside. Thanks for the video ! I will try this recipe today.

    Looks so good! If you are feeling lazy, you can airfry them instead of frying them. they will be less crunchy but still delicious!

      And in Mexico we all it “Camote Enmielado” or “Camote en Dulce.” So delicious! Only difference is that we boil the yams. Next time I will fry it. That crunch was spectacular 🤩

    I used to get this at my local korean-chinese restaurant. They serve it fresh and hot with a side bowl of ice water, so you dunk it to cool it down and I think it also helps harden the coating.
