Yay for being back at the cottage! It's funny I was using a can of cream of mushroom soup the other day and was thinking I had never seen/heard of anybody making it from scratch. Mushrooms are a favorite in our house so will have to make this for sure! Looking forward to the 2016 Great Stove Exchange, too! Cheers!

Never made homemade Cream of Mushroom soup and will definitely make it. Glad to see you are back at the cottage. Saw a great Tappan gas range at a local estate sale, but I have no place for another stove. It was a beauty, not sure if it was still operational but they had all the literature for it. I was excited because it was gas, most of the ones I see are electric. One of these days, I want to get one and have it restored, but until then I will get my vintage stove fix watching you cook on all of your great stoves.

Can't wait to see the new stove! Here in Palm Springs we have the opposite effect of the heat killing our Thyme. This year it didn't, and we have fresh thyme to use.
When I use mushrooms for Soup, I WILL clean them by throwing them quickly in a bowl of water and dry them in a towel to make the task quick and easy. After all it doesn’t matter so much as one is putting them in a pot with liquid …if however I am using them alternately I may not do the same. I love mushrooms….and always pair it with garlic and thyme. The perfect three-some.

I know this video was 4 years old but I'm wondering would soy milk or something like it work just as well.? I have a vegan or vegetarian nephew. I can never get keep those two things separated they always confuse me. But I'm always trying to help my sister out with recipes
Hi Brenda - it might work with almond or soy milk, but because those liquids don't have the fat of dairy milk, the soup will be fairly thin. It could be thickened up a little by using some corn starch or potato starch. Thanks!

Love you Guys, but - NEVER use "Cooking" sherry. It's garbage with salt. Never use any wine that you wouldn't drink. If you don't believe this, try taking a single sip of a "Cooking" sherry bought in the supermarket. You'll throw up. Use a good Sherry from the liquor store. If you're making spaghetti sauce - use a Cabernet Sauvignon (California not France)

I made barley mushroom soup last week. I used both can and fresh, and didn't cook the fresh ones too long so they wouldn't shrink down.

The trick with using a good red in spaghetti sauce is using very little. No more than 1/4 cup with meatballs or meat sauce, 2 tblsp without meat
