      It’s actually not the meat, it’s too much sugar causing all these issues. I used to eat a lot of rice, bread , pasta, ice cream and such and had high blood pressure, now I eat them in moderation maybe 1 to 2 bites but I eat more meat now and fats. All my labs are all clear and no longer taking meds for HBP.

      Very nice family! Appreciated much your trying to cook and eat Filipino food. As I've seen Mama Olga cooking 2 varieties of Sisig and I am happy that she did it well. To make sisig more tastier, Mama Olga can use siling haba or green pepper (long). Not sure tho if this is available in Russian market. Add a drop of Knorr or Maggi Seasoning and calamansi. Just a suggestion po. An avid fan of your vlogs from the Philippines.

    Make it a Lil bit dryer (fry its own oil) till its golden brown and crispy a little bit, put onion seasonings and egg, and lastly a mayonnaise..trust me it's really a good taste

    We are here part of central Luzon, Pampanga,were sisig is one of our popular dish, we don't put sugar on our sisig, boil pig ear with the face,and liampo season with salt n pepper,till tender. Then grill it and pork liver. Chop finely. Plenty of onion,salt n pepper, enough to taste lemon juice. Saute with butter, taste it.

      We also use pigs ears, yummy. That would be funny is your Mom opens a little stand and sell Filipino food as her as the cook. Maybe she can assist one of the restaurant and let her cook her way.

    Wow “ sisig” is originally from Pampanga. It’s a Pampango signature. I remember the late American Chef Anthony Bourdain visited Angeles City, Pampanga just to taste their own cuisine like Sisig.
    I haven’t actually tasted it, though I came from that region. Thank you Mama Olga for cooking and introducing “ Sisig “ to the family. It looks delicious!

    If tofu is available in Russia, you can use it as your protein.. just fry or air fry until crispy then make sisig out from it.. good for vegetarian like you

    There’s a mama sita sisig mix that u can just add into ur chopped fried pork or fried chicken. When u go back to the Philippines, try the squid sisig. So delicious!

    Hey Nice try, there. 👍👍 Your sisig version has sauce. Normally sisig is dry or dried. Then, it should have more chopped onions and added egg on top in the last part of the cooking. The other version is that you are supposed to add and stir the mayo on the very last part when the fire is already out and is to be kept for cooling down. Sisig Power!!!

    Your correct Liza, I used sisig on my buns it's perfect. The original recipe of the sisig has fats on it using face of the pig. Since your mother use pure meat the texture has totally different but it's still good. You can garnish with parsley and spring onion for a better kick.. Enjoy

    You should try cooking Tokwa't Baboy (tofu and pork). Pork and tofu (fermented soya beans milk cake) should be cut like the half of a finger. You need to slice/cut the tofu and fry it in cooking oil ad then put it in a small container. Same thing with the sliced pork meat (with a little fat with it). Then you need to saute minced garlic and onions, and maybe thin strips of ginger (not too thick but thin enough to be eaten and ignored when chewing. You mix these with the fried tofu and pork meat in oil. Add fermented small black beans and some chopped celery. You also add strips of carrots. Salt and pepper to taste. You need to pre-wash the black beans with water so as not to have a too salty taste.

    About the sisig, yes there are many ways to prepare them. One usual way is that it is served in a cast iron hot plate, one raw egg placed on top and mixed while still hot (option can be topped with fried egg also), then to taste we sprinkle it with some calamansi and also with dark liquid seasoning (Knorr brand or similar) to bring out the flavor more. On the side we place some red hot chili (siling labuyo) or we use hot sauce if you want it a little spicy. Chicken and even tuna can be used as sisig ingredient alternatives but its best to use pig meat (cheeks, jowl, ears, etc.) as its more crispy and tastier when fried. Originally many alcohol drinkers would usually prefer sisig as their "pulutan" or finger snack in gatherings while drinking liquor during celebrations, but now it is also served as a regular restaurant dish with rice. Enjoy..

    Instead of Lemon for your sisig, try using Green Lime instead. It has almost the consistency of Kalamansi because of its sourness. There is a Filipino Restaurant here in California where instead of Pork Meat for their Sisig Menu, customers can also chose chicken or fish for their Sisig.
