For the waterfall, you could use two shirts with different colors but the same style and have a more interesting look. You could even get a white shirt and do tye dye.

Try stretching the fabric once you cut it it will roll up and look much better try this with 1st and 2nd method

Instead of cutting off the bottom hem, use a seam ripper and it'll give you extra length. Doesn't take much time to do.
