Notice when Hinata used her [Usurper] on Rimuru, it was deemed "interrupted," and Hinata concluded that Rimuru has reached the same level as Ruminas Valentine. Usually, the two things that appear are either "successful" when the opponent is stronger, or "target unavailable" when the opponent is weaker. Last time, Rimuru was deemed "target unavailable," which meant that Rimuru was weaker than her at the time. That's why she was confident he can't win against her. Now, Rimuru was deemed "interrupted," which only ever happened once in the past. That's why she was so shocked to see such massive growth in such a short period of time.
I love how they gave a visual representation on how Shion was able to completely defy and tamper with things that would normally be super effective against her.

Shion being a Wicked Oni is the result of having Demons in the factor of reviving her.
Remember that the amount of magicules to revive Shion and the others are insufficient. So Diablo recommended his subordinates as sacrifice to add as magicules for resurrection. The Demonic attributes from those demons resulted to Shion's different evolution path from the rest of the Onis. And not just Shion. All of the people who got resurrected had demonic attributes too.
Edit: Btw, The attack Hinata did that is supposed to be "Unblockable, Unavoidable" probably is a lie. Raphael baited Rimuru into using Beelzebub on that attack on purpose.
