How To Make Turkish Ashure (Noah's Pudding) - Vegan Food

  • Ashura "Aşure" is an authentic Turkish dessert that is believed that it is first made by Prophet Noah to gather all of the remaining foodstuffs to make this sweet pudding when he and his family left the ark. Ashura is a healthy dessert filled with beans, dried fruits, whole grain wheat sweetened with sugar and spices and cooked in one pot. It is customary to share it with others.
    Let me give you a little bit about history and the importance of Ashura. Muslims around the world are celebrating Ashura, the tenth day of Muharram, which is the first month of the Islamic calendar.
    The word Ashura literally translates to "10", indicating the date of the holiday. Some Shia Muslims observe the day to mourn the death of Hussein, the Prophet Muhammad's grandson, at the Battle of Karbala on Muharram 10, about 1,400 years ago. Sunni Muslims observe Ashura commemorate three events: The day Noah was said to have left the Ark, the day Moses and his people were saved from the Pharaoh and the arrival of the Prophet Muhammad's migration from Mecca to Medina in AD 622.
    Muslims voluntarily fast from sunrise to sunset on the day of Ashura, following the example of the Prophet Muhammad. It has said that the first version of 'aşure' was made by Noah himself. It is a special customary dessert that you cook in a big pot and shares with others.
    Ingredients For Ashura:
    1+1/2 cups whole grain wheat (Aşurelik Buğday)
    3 tbsp rice
    1/2 cup each uncooked white beans and chickpeas (If you use canned use more than 1 cup and add it in the last 10 minutes of cooking)
    1 cup each dried apricots, figs (cut in cubes) and raisins
    About 2-3 cups sugar (as much as you desire)
    About 6 liters hot water (Will be used as much as needed for the consistency)
    Flavoring options:
    3-4 cloves boiled in half cup water
    1 cinnamon stick
    orange rinds
    rose water
    You can also add: apples, quince (peeled and cut in cubes), cooked Chesnut pieces, whole peeled almonds, and hazelnuts
    To decorate:
    Hazelnuts, walnuts, pinenuts, unsweetened coconut flakes, ground cinnamon, sliced dried figs and apricots, pomegranates, pistachio nuts..

      Dear sis ,in india or pakistan people make haleem with same ingridients but they use all kind of grains and beens and they dont use sugar in it they use meat in it and cook it for long time when it get starchy then they will garnish with coriender , and in india and pakistan that is famous when imam hussain and his family got myrtyrdom then for the condolence of it people of medina and mekka made it

      I wish I will visit Turkey next year and will have the chance to taste this beautiful dessert on this day from turkish hands. I'm from Iraq on this day we fast as sunni muslims but most people like you said mourn in this day but they also cook special food one is called hareesa which is similar with ashure but we only add grains without white beans and chickpeas and we cook the whole grains with bones and fatty meat then we crush it after we shred the meat and we serve it with cinnamon powder and hot splash of oil and most people have it with sugar

    We have different assyura here(i came fr north Malaysia..Penang state) dessert..we use rice flour..cook with coconut milk mix with boil green bean,banana..corn..etc..I found yours is more attempting.🍽️👍

      @@ninakhan97 In Malaysia, the recipes differ according to states. In east coast states, it is more savoury with lots of spices and shredded meat. Also coconut milk with different types of nuts and corns.

    This is interesting. In Poland we have something very similar for Christmas. It’s thicker ( not as watery) we also add lots of poppyseeds and honey. It looks different because of the black poppyseeds but I realised that it’s very similar. Thank you for sharing

    Thanks a lot for this variation of Ashura! In Egypt, we make another variation using whole grain wheat, milk, coconut flakes, sugar, milk fat (Qishta), cinnamon or rose water, raisins and peanuts. I would love to try this variation, very nutritious. Also, I have never mixed such ingredients before, so it will be an adventure.

    Wow! I will try your recipe. Back in the late 1960s a lady who lived next door to us in Athens, Greece would make it once a year. My brother and I would fight over it and my parents never got to have any more than a teaspoon ‘s worth. Ah, good times.

    So yummy desert nd very healthy we make it without dry fruts nd sugur only added salt paper nd lemon juice thnx dear fr sharing this unique recipe

    Çok lezzetli görünüyor Maşa'Allah😋😋. We here in Pakistan make Daleem (A dish which is a mix of different lentils, some wheat,some rice and some meat) My mother made it today and distributed in the neighbourhood.

    Wow! It’s really rich & very nutritious 😃
    In Egypt we make it with wheat, milk, sugar, cream, rose water & that’s it! We may add coconut & dried fruits as well

    I was watching a video and someone showed a package of whole grain wheat, on the back it had a recipe for “Noah’s Ark Pudding”, I was intrigued and searched for it. I’m glad I found your video, ashure looks like a lovely pudding. With the fruits on top it looks so beautiful.
    This was my first look into Turkish cuisine and I’m glad I found your channel. Can’t wait to learn more Turkish recipes from you!

      @@Patt12 whole grain wheat is exactly that, the whole grain of wheat.
      A grain of wheat has layers, a whole grain has a brown layer on the outside called "bran", the "endosperm" is the main part of the grain which is white and inside that is the "germ".
      White flour is made by first removing the outer layer of bran and only grinding the white endosperm. Whole grain flour is made with the whole grain intact, including the bran on the outside which makes a light brown coloured flour.
      The bran is very healthy for you, contains a lot of fibre and most of the nutrients of the grain, so it is healthier to eat whole grain flour, but it can have a less fine texture and there is a bit of flavour to the bran, so white flour is more common for every day use. Now whole grain flour is considered a health food.
      I hope I explained it well.

      @@momothebug I know whole grain flour which they make wholemeal Bread Whole grain cereal etc she cooked the grain which was look
      Like barley the whole grain wheat 🌾 it’s made in to flour
      I never cooked the grain
      We give to the bird I use to feel a little bag material one filled wth grain warm in microwave to use for my arthritis pain on back and neck
