1) Eggplant appetizer "Cobra"
Hot sauce:
Weight of peeled vegetables.
- Sweet pepper - 600 gr.
- Tomato - 1.5 kg.
- a large head of garlic
- red hot pepper with seeds - I take 4 pieces
- 3 tablespoons of sugar
- 1 tablespoon of salt
- 200 ml vegetable oil (odorless)
Eggplants (without seeds) - 1.5 kg
Cook for 25-30 minutes in hot sauce over low heat.
Add 50 ml of 9% vinegar.
* I take 0.5 l jars and sterilize them in the microwave.
Pour the eggplants with sauce into jars, roll up. The "Cobra" preparation is ready!
2) Preparing eggplants for salads and soups:
Boil 2 pots of water (one for the eggplants, the other for the marinade)
- Eggplants 1.5 kg (calculated for a two-liter jar) *boil for 7-10 minutes
- 5-6 allspice peas in two-liter jars,
- 10 black peppercorns
- 3 cloves,
- 1 bay leaf
Marinade - for 1 liter of water:
- 1 tablespoon of salt,
- 1 tablespoon of sugar,
- 1 tablespoon 9% vinegar
Place the eggplants in jars, pour in the marinade, and roll up.
* wrap in a warm blanket until completely cool.
In winter, I rejoice watching my family open another jar of eggplant preserves! So I stock up for future use so that everyone is well-fed and happy!
