You can check out a lot of free courses on Artstation learning. They have a couple on building full environments in unreal along with using other tools. It doesn't matter what tools you use. What matters is your approach and your thought process.
Love the content and the examples on how the thinking is happening. But I swear there's some static in the voice that makes it so difficult to listen to for longer periods of time.
Counter Advice: Don't Specialise. Plenty of room outside of coorporations where well rounded people are sought after. Those skills creating stuff handling mutliple disciplines on your own do pay off elsewhere from AAA.
Or Halo Infinite for that matter. I mean no disrespect to the narrator, as this video is actually quite thoughtful and well made. But the game had 1 environment across the entire campaign and it took them 6 years or more to make, with an absurdly huge budget. And the story was pretty bleak as well... I think any Halo game prior to 5 would have been a much better decision.
