Can I use baking paper? And when I mixed all my ingredients together (I used maple syrup instead of the extracts since I couldn't find one in my country), I got a brownish color rather than white one like the video

It takes a bit of practice to smooth them into even circles. You can try shaking the pan from side to side a bit to get them to flatten out. If the inside is still too soft, pop them in the oven again while they're in the muffin pan, so they can hold their shape but brown a bit better. Glad you thought they taste good!

Having some trouble forming them into circles. The batter is too sticky and the second I try and form the into circles on the baking sheet, the shrink back into blobs. Also, they completely stuck to both my parchment paper and silicone sheet.
Mine looked great, but they were somewhat chewy on the inside instead of crunchy. Only the rim was crunchy. What's the problem in your opinion? Oven too hot?

Was it really humid? They may have absorbed moisture from the air if it was really humid. You can recrisp in the oven by re-baking for 10-15 min

Yes you can skip it if you like, it's there for flavor but you can probably get by with just the vanilla.

Yes, just make sure it's really parchment and not wax paper (sometimes people think they are the same, but they're different).
These cookies wouldn't come off the paper at ALL!!!! I tried everything!!! Very disappointing.
