  • Making strawberry chia seed jam with jaggery is a healthy and delicious way to enjoy the flavors of fresh strawberries. Chia seeds act as a natural thickener and are packed with nutrients, while jaggery adds a unique, wholesome sweetness. Here's a simple recipe you can follow:
    Ingredients:
    - 2 cups of strawberries (fresh or frozen)
    - 2-4 tablespoons of chia seeds (depending on desired thickness)
    - 1/4 cup of jaggery (grated or finely chopped for easier melting)
    - 1 tablespoon of lemon juice
    Instructions:
    1. *Prepare the Strawberries:*
    - If you're using fresh strawberries, rinse them thoroughly, remove the stems, and chop them into small pieces. Frozen strawberries should be thawed before use.
    2. *Cook the Strawberries:*
    - Place the strawberries in a saucepan over medium heat. Cook them until they start to soften and release their juices, which should take about 5-10 minutes. Stir occasionally to prevent sticking.
    3. *Add Jaggery:*
    - Once the strawberries have softened, add the jaggery to the saucepan. Continue to cook and stir the mixture until the jaggery is completely dissolved. This should take around 5 minutes.
    4. *Add Lemon Juice:*
    - Stir in the lemon juice. The acidity helps to enhance the flavors and acts as a natural preservative.
    5. *Add Chia Seeds:*
    - Remove the saucepan from the heat. Add the chia seeds and mix well. The chia seeds will absorb the liquid and thicken the jam as it cools. Start with 2 tablespoons and add more if you prefer a thicker consistency.
    6. *Cool and Thicken:*
    - Allow the jam to cool to room temperature. It will thicken further as it cools. If it's not as thick as you'd like, you can add more chia seeds (remember that they will need some time to swell and thicken the jam).
    7. *Store:*
    - Once cooled, transfer the jam to a clean, airtight jar. It can be stored in the refrigerator for up to two weeks.
This strawberry chia seed jam with jaggery is versatile and can be enjoyed on toast, mixed into yogurt, or as a topping for oatmeal and pancakes. The jaggery not only sweetens the jam but also adds a rich, molasses-like flavor that complements the strawberries beautifully.
