Yes I’ve been making whole wheat bread for 40+ yrs. Our Bosch is still going strong. We have a magic mill grinder and make our flour, to me it’s sweeter than store bought flour. I tried making my moms wonderful bread recipe when I was 21 years old. She was living in AZ and I was in Mississippi so she couldn’t help me. I knew nothing about yeast and I made 2 wonderful Bricks 😂. I didn’t try making bread again for 40 years 😳. TH-cam is a wonderful teaching aid. I made 2 wonderful loaves of bread and my journey into baking bread began. I knew it was much better for you than store bought. Then I read about how much healthier fresh milled flour was for you. I made bread with store bought flour for about a year and then I delved into FMF bread. I never liked wheat bread from the store and I was shocked at how different FMF bread tasted. I am in the process of converting all my flour use to FMF as well as corn and oats. My husband and children always loved wheat bread so they were really loving the FMF bread. I was the hold back 😬. I make bread and freeze it and rolls and freeze the dough to take to my now adult children so they can enjoy the fruits of my labor. My grandchildren even love the FMF bread and are always asking me when I am going to bring them some more good bread. They are 9,7, 6, 6, and 1. The 9 yo doesn’t really like bread at all but the others love it. My 9 yo loves pancakes though so I freeze him pancakes. What a wonderful journey this is!!
Hey Michelle this is torey. Speaking of Bosch mixers my mom has one. She used to make 4 loaves of bread a week. I don’t have kids or family but I wanna make bread for myself in my Bosch mixer today
I hope you do. You can always freeze the extra loaves and you'll be set for bread for a while. 🙂 Blessings, Michele PS. Here is my video on freezing homemade bread - just in case! th-cam.com/video/jBFen9L8ToQ/w-d-xo.html
I need to start using my Bosch more! This video had me pausing to click the subscribe button and now I’m going to check out what else I’ve been missing!
Thank you for your kind comment, Tanya. You made my day! If you already own a Bosch you have a wonderful workhorse waiting to be put to use. Blessings to you! 🐚 Michele
I've had my Bosch mixer for 30 years and it's still going strong. I usually use dough cycle on my bread machine unless I want to make more than one loaf. I started making bread after my mother gave me an old bread machine she didn't use. After I retired I started making bread. I usually make two loaves a week. I really enjoy having a dough hook extender and bowl scraper.
I have been using a Bosch mixer since I was about 14 years old, so about 50 years now! I finally replaced my mom’s old mixer with a new one about 6 or 7 years ago! I love my Bosch for making homemade whole wheat bread and much more!
Bake twice a week and make 2 loaves at a time. I mill all my own flour and make only all whole wheat. I add in potato flakes I get from the LDS Cannery which makes it into a very light, soft bread.. I've never used buttermilk in my recipe. I may try it soon.
I only bake bread about once a month. There's only 2 of us and truthfully we don't eat much bread. With the food shortages coming, this will most certainly change. I do use a kitchen aid mixer or I just make my bread by hand. I also use my kitchen aid for making homemade pasta. Thank you and happy cooking and baking, Debbie
Hi Debbie, monthly baking is a good strategy. Making bread by hand can be therapeutic - like gardening. I have a video on how to freeze homemade bread coming out in 2 weeks. I'll be interested in hearing what you think and if you have any tips to share. You make pasta! That's wonderful! Great way to "preserve" extra eggs if you have chickens. I'll add a link to this recipe made in a KitchenAid in case you're interested, Debbie. Thanks for your comment! Blessings, Michele th-cam.com/video/S2_VOwdmcS8/w-d-xo.html
Just saw the video & have subscribed. I'm 72 & have been making bread for years. I got a Bosch Universal mixer 10+ years ago to replace my Kitchen Aid which still works. It's on a shelf. I normally don't use milk in my breads. I mostly make sourdough now & usually make 4 to 5 loaves at a time & freeze the extras. My daughter & grandson live with us & I do the cooking. Will try this one day when I want to make a quicker bread.

Hi I’m really love how your bread looks I started using whole wheat about 8 years now my husband had heart surgery and his diet change drastically and my son also health wise so I would make my bread with the whole wheat flour and bread flour to you and your stay safe bye.
Just started baking bread from whole wheat that I grinds at home. I am 65 years old but I guess is never too late. I have a Bosch mixer and a Mockmill. I ‘ve only baked just basic yeast bread but ready to venture with other recipes. Thanks
Hi Olga, nice to meet you. A Bosch mixer and a Mockmill make a wonderful team. Enjoy trying new recipes and learning new things. We should always keep learning. ❤️ Michele
'm a newbie at this bread making and Grain milling. I must admit it is addictive and fun with a result that is so yum yum good with a bonus of healthy to boot. What more could I ask for. I loving this. Getting past the price of the grain mill {Mock Mill} was biggest draw back. But it's past me now and forward I will march to face the dough challenges. I am looking for all tips and trick and friendly like minded happy bread bakers.
Hi Faith, you can use all fresh milled flour in this recipe - I often do. I showed using part fresh flour with some all-purpose flour because that's how most people get started but it works well with all fresh milled flour. Maybe I should do a video on that, thanks for the suggestion. Here is the link to the printable recipe: chocolateboxcottage.tv/videos/buttermilk-bread-bosch-mixer/
Hi Michele. I hope all is well with you and that you've been enjoying a nice autumn. I am going to make this bread next week. Now that the colder weather is with us, it's time for me to get busy with bread-baking. I will be sure to let you know how it goes. I will have to make a couple of adjustments, such as using olive oil instead of butter, and not using salt (due to my having a heart attack in January, and having to go "heart healthy" with my daily diet.) After that, I would love to try your Polka Dot bread. Thanks for sharing your recipes.
Hi Sashine, I am sorry to hear about your health struggle but glad you are taking care of yourself. If you completely eliminate the salt, the dough will rise more quickly, so pay close attention to it and get it in the oven before it deflates. It will also taste different, but you probably already know that. Take care, my friend. ♥️ Michele
@@ChocolateBoxCottage Hi Michele. Thank you for mentioning that about the dough rising more quickly without salt. I did not know that, so I will pay close attention. Thanks for your kind words, and I hope all is well with you. Take care. 😀
@@ChocolateBoxCottage Hi Michele, I hope you are having a good week so far. I just wanted to thank you for the recipe for this buttermilk bread. I made it yesterday, and it is delicious. It probably isn't quite as tasty as your method, as I had to leave out salt and sweetener, but it still very delicious, and I will be happy to make it again. I scaled back the amount of ingredients to make one loaf, which will do me for a few days. Many thanks, and have a good day!
I have a proofing cycle on my oven, I would assume that I can put the bread in the oven on the proofing cycle to rise, then take it out to preheat the oven. Do you think that is fine for both proofing cycles?
Hi Michele, Your bread looks amazing. It has such a beautiful golden shade to it. Your Bosch mixer certainly did a great job mixing up over 4,000 grams of ingredients. Thanks for the all the tips along the way. I'll be sure to check in for the Ankarsrum version, too. Have a wonderful day.
@@ChocolateBoxCottage Thanks, Michele. I will be sure to tune in. I also meant to say that I love your granite ware bowl. I have one similar, except it's a darker blue. It belonged to my grandmother. Have a good day.
We were married in June of 1974 we were eighteen and had graduated two weeks earlier tho we knew each other from seventh grade on and were engaged the whole last year of high school. My mother in law made bread and truly taught me so many things.....well I thought I would make bread really the kitchen was a stove and refrig in the living room no sink had to fill bowls of water to wash the stove was tiny and scary had to light with a match surprised I still have eyebrows so armed with her recipe I set out early to make it I set the two loaves to rise even after all day it hadn't so I thought it is close to supper now perhaps I should put the loaves together in one pan and bake it so I did.. it was so hard that we couldn't even cut it we decided to bury it in the back yard and some day someone will unearth this loaf of petrified bread and marvel at it ....this is a story often repeated I now make wonderful bread I too have this Bosch and love it dearly...thank you for sharing your recipe I look forward to making it.
If you have the Bosch can you do say one or two loaves? I have made bread one time in a bread maker, however the bread maker doesn't allow to let the dough sit over night, therefore I am looking for a different way to make my bread as healthy and nutritous as possible.
Not great at baking bread yet. Still working on getting it the way I want it. I have the Bosch and a grain mill to grind my grain. Why do you add the baking soda to your recipe? You don't usually see yeast and baking soda in the same recipe. Thanks for the tips.
Hi Elizabeth, it's wonderful that you have a Bosch and a grain mill. Keep baking and your baker's intuition will develop with practice. The baking soda in this recipe reacts with the buttermilk to give it scrumptious texture. 🌸Michele
I’m so excited to make this recipe, however I don’t have active dry yeast only instant yeast. Can I substitute instant yeast instead and if so how should I add it? Thank you 🙏🏻
Hi Wendy, you can use instant yeast. Go ahead and treat it the same as regular active dry yeast. It will work just fine. Do you live at altitude, by chance? Because if you do, you will need to reduce the amount of yeast.
How much do you recommend reducing the yeast specifically instant yeast if living at high altitude is it like 20% I read it sometime ago on King Arthur’s website and I don’t recall offhand
Hi Debbie. Just bought Bosch compact machine, would like to try your old fashioned buttermilk bread. What baking calculation shall I do to come up for 2 loaves of bread?
Hi Elena, let me give you the link to the 2-loaf recipe. It's tailored to the KitchenAid, but you can use it with the Bosch of course. Here you go! 🌻Michele chocolateboxcottage.tv/videos/buttermilk-bread-kitchenaid-mixer/
Hi do you recommend anksarum or Bosch universal for mainly high hydration bread/Neopolitan pizza making ? I had a kitchenaid tilt head and it died twice :( hope you can help me w my next purchase! 🥰
Hi Jinjin, both the Ankarsrum and Bosch will handle high hydration bread and pizza dough. I would personally lean toward Ankarsrum due to the roller and scraper action which is beneficial for this type of dough. It squeezes the dough rather than pulling it, so it takes longer, but the end result is excellent. But either way you will have an excellent machine. I am going to add the link to my blog post which included a printable side-by-side comparison of all 3 mixers (includes KitchenAid). Seeing the features side-by-side might help you make up your mind. Blessings, Michele chocolateboxcottage.tv/videos/kitchenaid-vs-bosch-vs-ankarsrum/
I appreciate your comment. This recipe works well with 100% whole wheat flour. That's what I usually make at home. I recommend starting with part whole wheat and part white flour until you are comfortable and gradually increasing the whole wheat flour to a level that your family will eat happily. Here is the printable recipe chocolateboxcottage.tv/videos/buttermilk-bread-bosch-mixer/ 🌸 Michele
I have a compact Bosch which makes TWO loaves. I have struggled to get a loaf of bread. I have 1000 pounds of whole wheat berries. Your recipe is too large. Would you please send me a smaller whole wheat flour and white recipe? I really need your help. Thanks
Hi Donna, you are set for wheat berries. You can use the ingredients amounts for the KitchenAid version of this recipe here chocolateboxcottage.tv/videos/buttermilk-bread-kitchenaid-mixer/ and follow the directions for the Bosch. You might even want to print both versions. ~Michele
Buttermilk gives this bread its luscious, soft texture, but you can use any kind of milk (coconut, almond, etc) if you are dairy-free. Even better would be something like coconut yogurt thinned with water to a buttermilk-like consistency. If you want to use plain water and no milk, you can do that too just know that it will be a different texture. ~Michele
@@ChocolateBoxCottage Michele, Thanks for answering back. I am sure you bake and cook all the time. I don't even like cooking . I am 74 and a prepper hence all the wheat. I live with my single daughter and two sons and help with all that. NEXT time I try to make bread I am going to use your recipe and tips. Hopefully that is soon. I struggle with my weight and pre-diabetic so bread is not at the top of my list. I would eat way too much. I made bread years ago but lost the knack. Thanks again
That does sound funny, now that I think of it! What I meant was begin with a small proportion of whole grain flour to white flour. This makes it easier for resistant family members to adapt becauseit is gradual. Let me share the link to the recipe for a 2-loaf batch. It is written for the KitchenAid, but is a great experimental or learning experience in the Bosch. Merry Christmas!! chocolateboxcottage.tv/videos/buttermilk-bread-kitchenaid-mixer/ 🎄Michele

Becky, you're my HERO! I absolutely LOVE your story!! Thank you so much for taking the time to share it with me. ❤️🤗❤️
If you have the Bosch can you do say one or two loaves? I have made bread one time in a bread maker, however the bread maker doesn't allow to let the dough sit over night, therefore I am looking for a different way to make my bread as healthy and nutritous as possible.
Great video, as always. Why do you spread softened butter onto the top of the dough hook?
It keeps the dough from climbing up where it doesn't belong, making clean-up easier.
Can you do this for sourdough bread?
I live in victoria australia where can I get a bosch mixer
Thank you so much for replying. This is most helpful. I’m in Florida so zero altitude 😊.
How much do you recommend reducing the yeast specifically instant yeast if living at high altitude is it like 20% I read it sometime ago on King Arthur’s website and I don’t recall offhand
Hey Michelle how do I tell when there’s enough flower in my Bosch mixer to mead my bread?
Hi Torey, start watching at the 7:20 mark of the video to see what the dough should look like.
🌻Michele

@@ChocolateBoxCottage Thank you!

I don’t know if you have posted a link to this yet, but what are your favorite bread pans?
I like these pans from Pleasant Hill:

I SURE WOULD HAVE
Those are some beauties. I would rather have had a 100% whole wheat demonstration.
I appreciate your comment. This recipe works well with 100% whole wheat flour. That's what I usually make at home. I recommend starting with part whole wheat and part white flour until you are comfortable and gradually increasing the whole wheat flour to a level that your family will eat happily. Here is the printable recipe chocolateboxcottage.tv/videos/buttermilk-bread-bosch-mixer/

My batch of dough makes 6 loaves.
I have a compact Bosch which makes TWO loaves. I have struggled to get a loaf of bread. I have 1000 pounds of whole wheat berries. Your recipe is too large. Would you please send me a smaller whole wheat flour and white recipe? I really need your help. Thanks
I can't use milk. Sorry.
@@donnacrimmins789 well then you get extra points for trying since you are not keen on cooking. :) Take care of yourself. Love, Michele
"Start off small...", with 5 loaves.
Merry Christmas!! chocolateboxcottage.tv/videos/buttermilk-bread-kitchenaid-mixer/
