My dad, a coal miner was born in i912 and I was born in 1962. We lived in a holler and dad always had hogs, a smokehouse full of meat, cracklings; bee gums with various looks, often a little rugged; and big gardens. Dad and mom had the talents for homesteading. I was going through my teen years during late 70s and 80s, the times when lives were getting simpler and easier for people in Eastern, KY. In my naivety of course, I started to see all that as hard work and hard ways for my parents who were in their 60s and 70s. On cold, frosty mornings, I still reflect on them being up before daylight, mom building fires inside the fireplace and heating stove, dad building a big fire with a cauldron stacked on big rocks - full of hot boiling water, making sure there was freezer paper, salt for the meat, and plenty of sharpened butcher knives. Dad had walked up hill around 3/4 of a mile to feed the hogs at least once a day the year prior. On the day of killing, mom would fix a huge dinner, which included some fresh meat and maybe some liver and onions, and everyone at the hog killing would come into her kitchen and eat. Dad passed in 96 and mom in 2000, and dad continued his joy until he passed. I am 62 now and have such an appreciation for their character and knowledge of both parents. Thank you for sharing a little of what goes into hog killing. It is busy hard work, but oh what a treasure. You guys are living the good life.
Buggy is so happy and loves to sing. she loves being outside, barefoot, with her Daddy. She is such a dear little child. I'm sure she has her "moments" like we all do - but she is so, so precious. I cannot wait to see how she does with her new sibling and I do so hope and pray it is a girl!!!!!!!!!!!!!!!!!!
Thrilled that I found you through Becky. My Grampa was a State Patrol officer from the 40's through the late 60's. and Grammie was a gardener. I grew up going to the farm every weekend. they raised all their own protein. And butchered their protein. he always raised 2-3 extra animals to sell to friends. I raised my first cow starting at 9. My first pig at 11. I participated in butchering because it was farm live. I was raised to respect and treat our animals well. Nothing has ever tasted as good as the food from my grandparents farm. I am disabled now, so farm life is not possible for me, but watching your videos is such a blessing,
It is my understanding that Becky is incapable of learning. Hell, she still calls her hero, Ina Garten, "Ina Gardener" even though half her comments are ppl correcting her. Becky believes she knows all, she's only here to boost her channel. She doesn't even eat meat with bones. Why should she be here??
I find it funny that we're ALL hoping for a girl for Buggie's sake & Buggie has NO idea she needs a sister!!! If this baby is a boy, I wouldn't want to be the guy walking up to the door to take Buggie out on a date!!! That's what I would call intimidation...Ben & his army!!! 😂🤣 😂😅
I was going to say no way, Becky!!! Even across our country, the homesteading community is so small and connected. Love that! I wonder if we're going to see an announcement this year that she's getting pigs 🤔
Omg there was Becky from acres homestead!! I saw her and her sister and was wow this is crazy. But so great to see other TH-cam channel creators coming to your classes. She is amazing cook and creator as well. Your video today was amazing as always. You both do amazing work in teaching others, and helping them get started on their homestead journey as well.
I saw Becky from Acre Homestead! 😆 Glad to see she’s learning what you have to teach!!! Thank you for all your wonderful content and for sharing with us the ways of homesteading🙏
I am so glad that Becky from Acre Homestead was able to join the class!!! It hopefully gave her some inspiration for the next time she orders a whole hog and not request the butcher to turn it all into bacon and sausage.
I love watching Meg cook. When someone can just eyeball the amount of ingredients you know they really know how to cook. Everything I've seen her make looks delicious. And to be able to cook for a crowd is just amazing. Great idea writing a cookbook!
I have watched your channel for years but have never commented. Meg, it is so beautiful to see how you feed your family with such care and prepare it all with love. As a fellow homesteader Mom, I know it can be difficult to keep up with it all and seeing you do it with such a smile and loving heart, inspires me to keep on keeping on!
🎵 "You make the bisuits, I put the biscuits on." What an adorable fun working song. I followed your page from Acre Homestead. I'm so excited to see and learn more. ❤
Meg, out of all of the other channels that I follow- YOU by far are the best cook- you are knowledgeable and your food looks amazing. Nothing against the others, but if I was learning to cook- you'd be the one I'd follow :). Love the biscuit song, Buggy. Was that Becky from Acre Homestead? I'm in on the cookbook!!!!
THANK YOU! I had such a great time at this workshop! Y'all are amazing hosts (all of you). 2 days of good learnin', good eatin', and good fellowship is hard to beat ... and Buggy is even more adorable in person! ❤
Just watched Acre Homestead about Becky’s weekend learning to butcher a pig. Very informative!! I also bought your pork cook book so I can expand my sausage making skills. Your headcheese recipe look great. In the UK we call it brawn and I can remember my mother making it. It really is true to say you can use all of the pig except the oink. Even the trotters, love them served with sauerkraut and mashed potatoes. Yum!!!
I will buy that book. Love this channel and ask that everyone commenting here PLEASE share this channel on your social media and tell your friends. They should have so much more than 157k! Also, Buggy singing when helping Meg with biscuits was priceless. Awesome video today
Meg, in NC at a "hog killing" our family and our neighboring families always served baked sweet potatoes, corn bread (flat skillet style & raised cake style), biscuits with sausage & cured ham & homemade jams and preserves, cracklin' corn bread, collard & turnip greens, dried butter beans or blackeye peas, and liver pudding. We also had eggs, grits and sausage gravy or red eye gravy with breakfast. I live down in Southeastern NC. Our BBQ is made with a vinegar based sauce and our liver pudding and hog head cheese or scrapple is made differently than it is made in the Western part of the state. I believe our style of liver pudding has a higher meat to corn meal ratio and no flour compared to that made in the western part of NC.
Becky seems to have trouble taking care of a few chickens and a toddler. I really hope she doesn't get a pig. Animals are living, breathing creatures with actual needs .... They're not YT fodder.
Meg with all you do in the day, cooking, cleaning and kids school and that food looked absolutely amazing and you still do a cook book. Wow. Glad you had a great day.
Hey I saw Becky there !!!! Everything you cooked looked delicious Meg , you and your family are such hard workers , and little Buggie singing was so cute . Thanks for sharing this video with all of us , God Bless .
Fun to see other people I watch on TH-cam share in your class. Becky from Acrehomestead attended and participated in hog butchering. Enjoyed watching your video and then listen to her review on her experience. She had all complaints on her experience. She stressed what a wonderful cook you are and how delicious the meals were. So positive on the class and how interesting you made it. You may want to catch her videos as she has a wonderful new garden set up. Cooking, processing and preserving. Thanks for filling a lot of alone time. (74 year old widow). I also get a kick out of your kids. Buggy and the barefoot boys. Looking forward to the new little one to come. Blessings to you and your family😊♥️
Just came back to re-watch this one, after realizing that Becky from Acre Homestead was at it; as I watch each of her uploads just like I do yours. Maybe it is the genuineness your each exude and your amazing work ethic that most appeal me to never miss either of you. I can't believe I missed seeing she was at the last workshop; all l can surmise is it didn't occur I'd recognize any of your guests, unless it was Jason and Lorraine, who are sometimes there. Perhaps I was just focused on the process and not on the people. Anyway, glad you met and hope great things come from it for each of you. As always, blessings!
Meg's Fudgy Brownies 🍫 1 cup Butter 🧈, melted 2 cups Sugar Whisk together. Then add: 4 Eggs 🥚 4 tsp Vanilla Extract Whisk together. Then add: 2/3 cup Cocoa 1 cup Flour 1/2 tsp Salt 🧂 1/2 tsp Baking Powder Whisk together until it's like a cake batter. Pour into an oiled 9×13 pan. Bake at 350°F for 45 or 50 minutes, but start checking around 35 minutes into bake time.
I was curious if they were homesteaders, or just people wanting to learn to process their own meat. Unfortunately there was a pretender there. The one from Washington state, chickens does not a homesteader make!
Becky!!! I love seeing everyone come together eating, drinking and having fun. I recently discovered this channel and have enjoyed watching it. I live in NC also :)
I believe I seen Becky from Acres Homestead and her sister too cool. Love when I seen someone from the channels I follow on other channels I follow. Everything looked great. Congrats.
Oh how I’ve missed you Holler Homestead! I used to watch you every day no matter what and somewhere along the way you stopped showing up on my feed. Well while watching Becky from Acre Homestead I seen that she took your hog butchering class and I was like “hey! I know them!” She couldn’t say enough good things about you on her video so I knew she had the right people. I’ve got you back in the rotation now, can’t wait to get caught up. Glad to see y’all are doing well. ❤😊
Wow ! I thought I seen Becky. But then I said "Nay, can't be". But yep, I guess I was correct. And if I took the time to scan the comments, it wouldn't have taken me a week to confirm it. Nice seeing both of you together. 😊
Meg all of the food looked delicious!!! I loved seeing Buggy singing putting the biscuits on the pan She’s so cute! And Becky came from Acre Homestead! How cool is that !
Hey I'm a new subscriber coming from Acres Homestead Becky and I'm so happy I found u you are such an incredible amazing inspirational woman I'm here to stay
Loved seeing Becky and her sister from @acreshomestead!!! I follow her channel and really enjoy her recipes!!! It would have been great to see her acknowledged!
That was a very cool enjoyable video. I had to do a double take because I saw Becky from 1 acre Homestead in y'alls class. Started watching her recently and I don't know where she gets all the energy to make all those freezer meals.
Here from Acre Homestead! Love watching Becky and so glad she did this, just a brief look thru ya'lls content it's right up my alley, new sub and excited to explore your content!
Meg you are so awesome! Great food I am sure Becky (acre homestead) was very impressed with the Hollar's both the teaching and food experience. Good for you guys, this is going to be a great year for the Hollar's!❤
Becky could learn a lot from Meg on hosting, and cooking. Meg's food looks amazing and she never feels frantic in the kitchen; always relaxed. You can tell Meg enjoys cooking. Hopefully Becky picked up some tips from Meg as well as Ben. And not just about butchering but using various cuts of meat (maybe even ones with bones!) and not just her usual bacon and sausage she gets every year from her whole hog.
Too cool to see Becky from “acre homestead at the pig butchering! Love your sweet beautiful smile Meg! I saw the pattern for that cowel you wore and you knitted somewhere but for get where?
"My biscuits ~~~ you make the biscuits I put the biscuits on the pan~~~" Oh my word, she is SO precious! Such a creative little gift from God. I got my Pork Cookbook!!!! I'm SO excited. We are butchering in the near future And helping our neighbor lady butcher hers as well, so this will be a Handy cookbook indeed! Thank you Meg! Excellent video too by the way!
It was nice seeing Becky from Acre Homestead at your butchering table. Everybody looked so smiley and boy were there a lot of men with beards lol. Great video, thank you for sharing xx
ooo i spotted beccy from acre homestead,,i,ll look forward to her telling us all about her experience, and little buggy is such a joy to watch growing,,and the biscuit song melted my heart xx
Loved it! I saw Becky from Acre Homestead! I love Buggy’s singing! My daughter and my granddaughters are the same way. My daughter sang everything she did! Great job and the food looked amazing!
As an artist myself in the field of music, there's something about an artists hands that I love to watch. And every field has it's artists. I love to watch Meg's hands as she cooks. Just a certain awareness that she probably never thinks about. She just always seems to know what to do next. In music we jam. That's where you take a few ingredients known as chords and then flavor them to our own specific liking with some melodic content that we just draw from somewhere, I still don't know where, but we do. I watch her do that in her kitchen over and over. OK, maybe I need to get a life, but I just love watching her cook! And then there's little Meg making up the biscuits song. What's not to love! ❤❤
I so enjoyed watching you cook and prepare some good looking food! Becky from Acre Homestead highly recommended visiting your channel and I'm glad she did. When I saw your name The HOLLAR Homestead and that you are in North Carolina, it reminded me that Justin Rhodes is rebuilding The HOLLAR House, also in North Carolina (and is also a homesteader) so I had to check you out. Low and behold, I recognised you and Ben immediately from Justin's TH-cam a couple of years ago but......I still have no idea if the Hollar name is connected in any way🤔 Looking forward to more videos of you having such fun! 💙
It is their last name...isn't that cool😍 My married last name is Stiles...I did hair for a living, of course I had to use a play on my last name for my Salon 😁
Second day you said good morning pig butchering day 2 and I thought you were going to say good morning pig people. 😂 I see Ms. Becky! Is that her sister too! Glad she made the trip to NC from Washington State! Your food looked so good. I love how your children pitch in to help, from the oldest to Buggie. You have such to be proud of.
Wow Meg, that was an incredible meal plan for a crowd and organized. I bet it was delicious and tasty. Thanks for the cookbook and I plan on getting one. Thanks again. Love you videos.
Oh my goodness ! Buggy singing her biscuit song ! Freaking adorable !
So cute and such a great helper! ❤
Right! I said it was my favorite part of the whole weekend!!

I rewind (lol) to make sure it was her. It was cool to see her there, never know we might get to see her doing her own.
I saw her, then came to comments to make sure. ❤
Was that Acre Homestead at the butchering? Looked absolutely yummy and I would be in a diabetic coma. Lol.😂
Yes, she was there with her sister. It would have been nice if she had been acknowledged.

Yay! Great video. We love the cookbook. Thanks for making it available!
She reminded me of a young Loretta Lynn ... Well at least the stories of her young life

It was nice seeing Becky from Acre Homestead at your butchering table. Everybody looked so smiley and boy were there a lot of men with beards lol. Great video, thank you for sharing xx
Yes, men. Becky, where was baby-faced Josh? Oh yeah, in his laundry room office/cell watching the baby you had in exchange for a million-dollar house.
Well done Hollars! Love seeing the way you do things. Buggy singing the biscuit song was so stinking cute!

I love this parallel! Thank you ❤️

Oh wow I saw Becky there. Love your teaching video
I love we got to see this from Meg’s viewpoint this time. Amazing as always, Meg. A cookbook? Woohoo! Thanks!
Oh sweet you - pregnant and saying - making all this food to a flock of people - is easy... you are a superwoman 💛🧡❤
Becky!!! We saw her. Also your little Buggys song 😍💖💖💖 the best.
Looks like a lot of fun! The Hollars & Becky from Acre Homestead in the same video. How delightful! ❤
Wow Meg, that was an incredible meal plan for a crowd and organized. I bet it was delicious and tasty. Thanks for the cookbook and I plan on getting one. Thanks again. Love you videos.
