In my career as a chef (38 years),I have seen various versions of Biriyanis. This is an abomination. Absolutely disappointing. While I do get it that various cultures have made this iconic dish their own, this method is just a 'hack'. I'm from Hyderabad in South India so I'm not just mouthing off here. One of the best versions of a Biriyani originates here.

Having got that out of the way, I have a few suggestions to put you on the path to finding your favourite Biriyani recipe. On TH-cam, there is a chef,Ranveer Brar, who does a Hyderabadi chicken Biriyani. One other type of Biriyani/Pulao is the Lucknow style. I shall try to provide a link,I say 'try' because I am not very tech-savvy. My third suggestion is a book entitled 'Biriyani' by Pratibha Karan. In this book, the author showcases the various styles of Biriyani cooked in India. The book is published by Random House India. By the way, I have to mention the video by Ranveer Brar is in Hindi,with English subtitles while the other video that I shall endeavour to share with you is in Urdu. I'm not sure about subtitles. I do like Muslim style biryani best..so if you have a recipe in that regard I'd appreciate it. I've watched chef Brar and his food looks delicious as well.

Very good but you spoiled it by adding margarine. Should be real butter or ghee. Easier to digest and will not leave an aftertaste.

Just an FYI this is not proper Mutton Biriyani....This is a African Version which I reapect .....but definitely not traditional.
