I always wondered why croissants were so expensive, then I learned to make them. I will never complain about the price again. Baking is a labor of love but some sweets are just super labor intensive! I’m just a home baker but I find shortcuts where I can all the time. Brownies are the easiest and so delicious, and chocolate chip cookies certainly aren’t hard, but, much quicker, easier, and so much less work when you make a tray bake or a cookie cake instead and don’t have to chill the dough, scoop and roll them! 🤣 I also just don’t roll them anymore when I do make them. It’s fine 🤣 I also only make drop biscuits now. Especially when I’m making more than one thing, these shortcuts are so helpful.
They are the definition of a “labor of love.” If your heart isn’t it to win, they will not turn out right. If I’m ever in Australia, your bakery is one of my top priorities!

Making them yourself as Brooki mentioned is much cheaper, another tip is to use sun flower seed flour (sun flour) instead of almond to reduce the price. It's hard to find and not cheap to buy, but its super easy to make. Just labour intensive, on top of the macarons themselves. Pumpkin seed flour (often sold as protein powder, or make your own) works too! The taste is just a little different.
Auchan in Velizy, France, in 2009, hired a chef pâtissier who worked for the palace and big table around Paris (same palace as Pierre Hermé used to be) to handle production of Macaron for their fresh pastry counter… 50cts for a normal size one, 1€ for large size, crazy amount of taste available… Some of the best macaron I ever ate in my life and god knows I tried them all in Paris, Hermé, Marcolini, Le Notre (before they sold their business/soul). For the price it was also impossible to beat, I still have goosebumps when I think of the Melon, the pear and the yuzu ones. Absolute bangers. Price is and will always be a variable.
They are worth every penny. You are an inspiration to a hobby baker like myself. You give great ideas . I love baking. Some people might think it's stressful or too much work but I think that if you love what you do it's not work but a passion.

I make macarons, and it's very hard. It takes forever because you have to make sure you dont overmix or undermix it. You have to leave them out long enough,make sure you cook them long enough, and its very time-consuming

Give up trying to make the cookies pretty; once you do, they become easy as pie to make, and you can actually mess around with the texture, sweetness, and flavour intensity to make your ideal macarons. Let the bakeries make the pretty ones for people to post; make things you’ll enjoy for you
I have yet to make them because of the work and how delicate they are. Humidity is a factor. If it's too high they'll be sticky. I don't want deal with this.
I stand on “it depends” as a baker there is called substitution instead of almond meal/flour use APF. With fillings i disagree so many options non expensive filling you can hand made. There are vegan option to use for macarons. As a baker macarons having insane expensive prices is just wrong even if they are hard to master and labour intensive.
Good Macarons are dream-like in texture and are very tasty. The bad ones are food. I see them as luxurious baked items. If you want bulk carby sweetness, there are better choices of baked treats to choose from.

I spent six months learning how to make macarons for a bridal shower. In retrospect, it might’ve been cheaper for me to buy them at four dollars a cookie.
My nieces and nephews love macarons so much that I learned how to make them myself. She's right it's a lot of work to make macarons. But learning how to perfect macarons makes every bite worth the labor that goes into them.

I work on pastry departement in a hotel, and my chef refused to make macarons for our restaurant's showcase bcs of this particular reason aside from another reason. We have to build another department exclusively for macarons, and operational director don't like the idea of creating a whole new department just for one dessert.
Sell the "ugly" and "imperfect" ones at a cheaper price. Problem solved. A lot of people, like myself, don't care for the visuals. We are here just for the taste. Failed macarons still taste good

Retired chef here, and they really have no attraction for me. I appreciate the amount of labor they take, but never understood their cult following. But then, I don't care for things cloyingly sweet. I also prefer simpler things like a good almond cookie.
