When you include us by using “we” in your decision making, it feels soooo good. My husband says “are you watching Becky? What did you do with her today?”…. Lol. I just called to see if our local farmer is allowing the seniors in our area to pick tomatoes at half price a bushel! One more week! I see tomato paste in our future….. haha.
That’s awesome that they give seniors a discount! I’ll have to check my farms, and see what age they consider senior.
I feel like you all are with me! It's so fun to be able to have this amazing community! That is so cool they give you all a discount. Happy project days ahead and thanks for being here! - Becky
This!! I always feel like a friend!!
Amazing again Becky...🎉🎉
50,000 people totally exhausted from being in Becky's kitchen all day! 😂
Love the zucchini door dash. Here we call it a drive by! You drive by family or friends, drop off the veggies, ring the bell and run away!,😀
Becky you are killing it with these preservation days! I admire your hard work and effort. Love watching your videos to unwind and de-stress from everyday life. Keep being you :) x
You can grill the plums a bit on your grill then top with vanilla ice cream and if you want to top with chopped nuts or granola as a treat!😋
Oh yum!
Ohh yeah!!!
grilled peaches are delicious done this way too!
Just a hint on the eggs: when they go on sale, I buy a few dozen extra. Then using silicon muffin tins, sep. whites from yolks, freezing a muffin pan of just yolks and a muffin pan of just whites. Store in silicone bags in the freezer. Recipe calls for yolks - just grab a few from the freezer. Huge time saver!
If you freeze dry your tomato sauce and then powder it, you have instant tomato paste that is delicious! Just add enough water to your powder to get the thickness you need. Quick, easy, no fuss.
I think shes said in a previous video she doesnt end up using the powered stuff she makes so she doesnt use it anymore
She can also freeze dry some plums for great snacking.
@jess9870 I think she was referring to the tomato skins, which I don't think would give you the same product the the actual freeze dried tomato would.
I agree about freeze drying and using the powder for paste, but it looks like she has plenty of tomatoes to do both.
When I feel lazy, I watch Becky and I always get motivated to GET SOMETHING DONE!! THANKS BECKY!!
Me too! 😂
Me too!!! Becky’s energy is contagious. 😊
@susanoneida1723 absolutely!! I just love her!!
Hi Becky I meant to tell about my pasta pan with strainer when you were peeling your tomatoes.. I looked on Amazon and could only find a 12 quart one but I think they come larger. It is made of stainless steel. It has a basket inside that you lift out when your pasta is done. All of the water drains off. I thought it would be great for blanching tomatoes, peaches, beets etc. Fill the outer pot with water, bring to a boil. Fill the drainer with your produce and dunk it in the boiling water. Boil for the appropriate time and lift them out. No getting burned while putting the produce in and no over cooking trying to get them all out. It is also great for steaming crab legs.
Those frozen plum slices will make great teething snacks for the baby or blend some up while still frozen for an instant no sugar needed plum sorbet.
I was talking to you telling you about the plums on the bottom of the pan. I bet it was a little bit of a mystery where they were coming from. Thank you for bringing more happiness into our world Becky!!
Yay!! Becky I love the preservation videos but those garden scenes are beautiful!!! Watching your land change into that has been so awesome!!! You must be so proud of your progress! Well done!! ❤
Becky, when I saw the plums stuck on the bottom of the baking sheet I was telling the tv screen. I guess you couldn't hear me through youtube land. LOL Thank you for all the great information and for the unexpected comedy.
Oh my Becky, I laughed out loud at your plums sticking to your pan and Josh wondering where the plums were coming from. That is hilarious! 😂 Awesome job on the tomato paste! Yummy
Your breakfast dish looked amazing and so simple. Can I please make one Nana comment? Now is the time Becky to start practising turning your pan handles away from the edge of the bench. By the time Baby Acre is big enough to reach them, it will be second nature to you and baby will be safe. Please don't consider this a judgement, one of my older brothers ended up with a pot scold from a situation like this as a toddler.
There were plums stuck to the bottom of the pan lol......girl you are absolutely amazing seriously you are a super woman you not only do everything for the home cooking cleaning preserving prepping meals freezing meals making things grinding your own herbs freeze drying baking gardening taking care of the baby yourself josh the home ..you are a super woman I hope when I'm able to move to a home with a bigger kitchen I can start doing more of these things i want to can but I'm so scared to do that lol ..but you are truly a super woman lady .
dont be afraid to can things. there are lots of books with complete directions. and nobody said u had to can a ton of things at once. u can make as little or as much as u want.
Hi Becky! Love watching you in the kitchen ❤
Yay! Thank you!
When making tomato paste this year I put my tomatoes in my steam juicer. I discarded the clear juice from the tomatoes ( I am sure you could think of a use for it 😊) then ran the steamed tomatoes through my food mill. It was then much easier to cook down into paste. This was just the way I found easiest for me. Love your videos!! ❤
That's a great idea!
I would roast my tomatoes gives it a wonderful flavor!
Oh snap becky is almost at half a mill friends!! I came round at about 10k friends. So happy for this channels continued success 🎉❤
Hi Friend!
Just had to write and tell you how much I enjoy your videos. You make my day! You’re so knowledgeable and a bundle of energy. I wish I was younger, so I could do half as much as you do! I’m 74 and not in the best health, but I will try some of your recipes. Thank you for the excellent job you do!!
My boys call zucchini chocolate cake, "Chocolate vegetables"! I am impatiently waiting for my tomatoes to ripen. I may end up buying some this year. I love the energy and passion you have for your garden and preserving the harvest. Thanks for the inspiration to keep going!
Shakshuka is such a wonderful comfort food! We like to top it with feta cheese. The saltiness of the feta just adds so much to the dish. Now that I’m vegan, I’m trying to perfect a “tofu egg” to cook on top. Plus use a vegan feta. Not the same as the original but eating plant based has helped with health issues. Fun story. My daughter was in Israel visiting friends. They were traveling to another city and they stopped at a rest side picnic area. The people she was with whipped out frying pans and all the ingredients for Shakshuka … just like we would pull out hamburgers and hot dogs to cook on the grill.
I saw the plums stuck on the other tray and wished I could warned you 😂😭 I love your videos Becky! I watch as soon as they come out and spend my day cooking, baking and cleaning with you. I rewatch old videos when I finish the new ones and… I’m here 😂❤
Becky, our family loves shakshuka! We usually eat it for a break fast meal after Yom Kippur, or sometimes during a brunch/luncheon. In my opinion, it is a wonderful leftover option... we just add new eggs when reheating. Thank you for shar8ng your talents and love of food with us!
I love making tomato paste pucks! So many recipes only call for a tablespoon or two, but it comes in cans 🤔. So whenever I open up a can of tomato paste, I freeze the rest in tablespoon size pucks, and it works great!
What a great idea!!
Here in spain i buy it in a tube. It keeps for a long time in the fridge. It doesn't go bad.
The other thing you can do to enhance the chocolate flavor (instead of or in addition to the cinnamon) is a tsp or so of instant coffee/espresso powder. This is the "secret" ingredient in my brownies! You won't taste coffee (my youngest son hates coffee but loves my brownies) it just makes the chocolate taste "chocolat-ier"
That's so funny the recipe I followed called for espresso powder but I didn't have any so that's good to know maybe I should get some for the pantry
I have heard this a lot. Never done it myself but have eaten brownies with coffee in them before and they were awesome.
Yep! Works like a charm!!!
When I make my chocolate icing for my chocolate cake, I put coffee in it with powered sugar & butter. It tastes so good! Becky, you are a super woman to do all you do! I wanted to tell you about the plums on the bottom of the first pan. To bad the dogs got some all over. But that's things you can't always control! I don't think even as young as you are, than I could do all you do. I did have 4 kids, they're within 5 1/2yrs. I was 22yrs first baby & 27yrs last baby. So I was a busy Mom for those yrs. Then, when my last baby was 4yrs I decided to go to work, just part time. We kind of needed the money & I needed a break for a few hours. It really helped me & the kids. To be apart for a little bit. I was a CNA for 10yrs & later I went back to my training from Cosmetology, went back to school, got in the practice, & went to JC Penny's for another 12yrs. As a Hairstylist. Then I wore my body out & had to stay home for my health! But Becky, please do take care of yourself. I know you don't think about slowing down alittle when you're young. But you should some. My neice, didn't take care of her younger self. Later, she tried but just to late. She was a deaf mute teacher & loved her kids! She would start in the morning with a cane & walking then by noon had to go to her wheelchair, & later drove home. She had a terrible headache & died at 52yrs. I miss her very much! Thanks for sharing!!!♥️ ☺️🫂🍄🌞🦩🐦🦋🌹🍅🌶🫐🥒🧅
@@AcreHomestead if you keep it tightly closed, away from any humidity, it will keep a VERY long time. And it doesn't take much, so a container lasts and lasts!
Thanks Becky for including us as we., busy busy busy Becky 9-6-2023❤
I really enjoyed this. I love the idea if tomato paste pucks. I can never use a whole can or tube before it goes bad. The pucks are a perfect idea!!❤
It’s called Nothing Bundt Cakes. My Sister owns a franchise in St. George, UT.
Hi Becky!!! A couple of recommendations from a cottage baker: when releasing a Bundt cake, if it won’t release with the flour/buttered pan, try a plastic fork, it’s flexible and can get into the ridges easier. Also, if your cake pan is smaller, fuller than it should be? Turn your oven down 25-50F and add time onto your timer, approx 10-20 mins longer.
Happy Baking!!!!
I love shakshuka and we have it for dinner at least a couple times a month. Sometimes I'll keep it vegetarian, but if we're really hungry I like adding sausage (either bulk or thinly sliced hard sausages) - especially spicy sausages. It's also really good with roasted sweet potato and/or adding kale or other greens to the tomatoes!
Edited to add: Also, shakshuka reheats wonderfully well.
First of all---😂😂😂---thank you for the laugh regarding the story of the mystery plums!❤ Next, I thank you for this great video and the joy of your garden and the usefulness of your recipes! Even my great grandson who is almost 4 enjoys your videos. Yesterday he asked if I was going to "chop the tomatoes fast like Becky does!" ❤
Glad you got the kitchen aid attachment!! I got mine 2 weeks ago and I laugh like a schoolgirl every time I use the dicer!! What a gift for my arthritic hands!
So I saw a reel today where a gentleman put his pureed tomatoes into one of those drink dispensers with a spigot on the bottom. Let it sit in the fridge all night, and was able to remove all the excess water in the morning when it separated. SO cool!
Hi Becky, Living Traditions,Sarah, has a quicker paste recipe. She dips out a lot of the tomato water and it makes it cook down a lot quicker. ❤😊 She uses paste tomatoes 🍅 😊
I do this also .
Zucchini Door Dash, love it!!😆😍
I saw the plums and was saying”there are more!!!”😂 what a funny story finding plums all over lol
I’ve been loving preserving right along with you! You’re doing amazing 🤩 I just did peaches and garlic, and I’ve been harvesting raspberries at my in-law’s house. Happy preservation season everyone! 😊
Since you're a fellow cilantro lover, it's also amazing on shashuka. Also, pretty great as leftovers. I typically make the base, then use as needed with eggs.
Love your hair/bun today! You look fantastic Becky! ❤
I would be tempted to freeze the tomato paste in mini-muffin pans.
Haha, I love when you taste something really good and your face lights up. Good food is such a gift!
A cool hack that I use for tomato paste is to cook them down and then freeze dry the “sauce” and turn into a powder. I use the powder in place of paste when needed so this way you aren’t wasting a small can of paste or needing to find other things to use it up, or freeze unused paste left over. You just toss it in the recipe or you can reconstitute it with a lot less water until it is the consistency you want and then use it in your recipe.
I love this idea! I’m going to give it a try with my tomatoes!
You can dehydrate into a powder also for those who don’t have a Freeze Dryer
My mom always put a bit of leftover brewed coffee in both chocolate cake and frosting. I detest the taste of coffee, but in chocolate cake it makes the chocolate taste more chocolaty!
Haven't seen your videos in a while and I came back to find that you passed 500k subscribers! Congratulations!
I have a chocolate zucchini bread recipe that's very similar to your bundt cake and my son, as a toddler, LOVED it. I was so thrilled to find a recipe where I could sneak in a veggie! :D
When you need espresso powder for cake make a cup of coffee and boil it down to 1/3rd of a cup. Then sub that liquid from part of the liquid in the recipe
Becky, I need you to know my 5 yr old obsessively watches your channel with me and calls you "the fast cooker lady" 😂. He went through my newest cookbook a farm to table one and picked a recipe to try and demanded we watch this video during family dinner time while we ate. He's one of your biggest fans. Little homesteader in the making. ❤❤❤
I make zucchini brownies similar to your cake. I also omit the chips as I don’t like them in chocolate desserts. I do keep espresso powder on hand since it enhances the flavor so beautifully 😊. The brownies take up 3 cups of zucchini so it’s a win in this bumper crop year! The batter is very dry until you let it sit for 5+ minutes. They taste much better the day after baking. Yum!
Can I be your neighbor!🤣🤣
It’s so satisfying to watch you do all the harvesting, cooking, preserving etc .. thank you for sharing your farm life!❤️💕
Becky maybe using the side by side vehicle its better for less hauling. And easier to take to the compost.
I saw those plums stuck to the bottom of the pan and wondered when you would realize it; your voice over comment of finding plums everywhere during that day really made me laugh XD Adorable anecdote
Wow, the tomato paste turned out gorgeous!!! So velvety delicious! 🍅🍅🍅💕👍🏻
Becky I am soo happy for you. The plans you’ve had for your garden and all your efforts. Food preservation and your generous spirit. You are an inspiration for many of us. Keep up the good work.
You can spray your pan with oil then use granulated sugar to coat the pan instead of flour. The sugar melts into the cake and that will prevent the white spots from the flour.
Hmmm I might have to try that. I’ve always done softened(but still solid) butter and dusted with flour. I don’t recall too many issues with flour spots. Some kind of solid fat seems to be the trick for me.
You are a superhuman woman!! I was in the middle of your preservation video when I got the notification for this video! Two Becky videos back to back!?!? YES, please. Best day ever. I appreciate you and all your hardwork. XO 🤗
It's really nice of you to turn the volume down when you're using the blender... so thoughtful ❤❤❤😊
Lunch pronounced “Shock-shoo-kah” … I love it! So easy to make!
Yay another day in the kitchen. Love your videos!!!
Yeah saw the plums on the bottom of tray! I was like I’m sure she’ll see it later!🤣
I store my garlic cloves in wide mouth glass jars in the freezer. Sometimes, I put a storage bag in the jar and stuff them into the bag. No smell in the freezer and you can use used lids. Can use any type of jar with a lid, but larger opening works best.
Love the plum story
I planted those yellow tomatoes this year also. They are so good. Love them for grilled cheese and tomatoe sandwich. I also used them half and half with heirloom red tomatoes for your roasted salsa. YUM! My son said that was the best salsa he had ever had. Thank you for sharing!
Amazing! To look what you designed, created and planted and now your eating is pure magic! Bravo 👏🏻 what a journey you have shared with us!
Watching my favorite Becky and working on my roma tomatoes 🍅🍅🍅!!!
You are on fire with your garden preservation. 🤗👏
Everything looks great. Loved the plums story. Laughed hard at that. Sounds like something that would happen to me
omg, i have gotten so many tomatoes this
year as well. my goodness what a harvest. yours are still going and ive pulled mine out. i enjoy watching you for years now!!! such beautiful growth
Yes sweetie, we saw the plums lol bless u xxx
Yay! Caught the video when it was released for 36 seconds. I’m never this early. Lol
Thanks for watching!!
I love that you cleaned up the garden to make it look good.
Cool, i'm currently making tomatoe sauce with what I harvested today. Sad to think the summer is almost over.
Really random, but one of the things I truly love about your videos is there is no background music. It literally feels like we are sitting in your kitchen chatting while you are working 😅 Thanks for the content Becky as always. ❤
I've been having her videos in the background for "company" while I get my own chores and food preservation done:) I also appreciate the lack of background music. Feels like I have a friend over and we're "chatting" while working.
I canned raspberry jam and marinara sauce today, but nothing compares to your huge harvest and canning efforts!
raspberry jam mmmm u made my mouth water lol
It all counts. Trust me lol
Becky the tomato paste pucks was such a good idea! I hate buying a can and only using half. What a genius idea.
Hi Becky. You’ve encouraged me to make and can up a bunch of habanero peach hot sauce🙂🙂
You could save the seed's and donate to a seed bank in your area or just give them away. Seed's equal food for some people. I have found that seed's saved from your home garden become more acclimated to your area and grow better year after year. Thank you for the wonderful ideas about how to use all the tomatoes we're getting in. Have a wonderful day.
Thank you so much!! I have never seen tomato paste made!!!! Excellent indeed! Well done!!!
The reason that you add instant espresso powder to a chocolate item is because it makes the chocolate flavour deeper without it tasting like coffee. I keep a jar of instant espresso in my pantry for just this reason. We don't use it to make coffee.
Friend, I can always tell after you taste something if you like it or not. Today, your eyes got so big that I knew you loved this dish. There have been other times, when you have made something and your eyes didn’t get big. LOL Thanks for sharing, I have never made bread but I will be going on vacation next week and I think I will give it a try. Love your videos! ❤❤
I love shakshouka! It is such an easy way to have a hearty, healthy breakfast, or any other meal! I love serving it with homemade sourdough😋
I love your videos and look forward as well as appreciate each one! It feels like a good visit with a dear friend 💖
Can we see your beautiful chickens enjoying their bounty sometime? I'll never be keeping chickens but they are sooooo adorable and that would be absolutely wonderful 😊
Many, many blessings and lots and lots of love to your family. God bless from the Southeast coast of England ❤
Great show!!
Your cake looked AMAZING!!! When my kids were little, they enjoyed a chocolate zucchini cake and had no clue they were eating a veggie. Your tomato paste looks awesome as well. I never thought to do that. Thank you for sharing!
Ooooh I made it to a video early! Have a great day everyone 😊
Becky every video of yours has a wonderful, kind energy to it. Thank you so much for sharing with us!
What a great idea for a meal! Thank you!
Of all the tomato paste videos I’ve seen, your paste actually looks like paste. Great idea to freeze as pucks too!
Good frozen plums are great to drop in white, blush and summer wines and they are also great in any seltzers/carbonated waters or orange or peach flavored cockfails. To be fair they are also awesome to just eat when they are still patlrtially frozen. Frozen plums, peaches and nectarines are one of my favorite summer treats and drink additions down here in Georgia.
Woohoo a evening with becky hi from the UK xx
Beautiful job Becky love these videos .
I can't wait for when your child is old enough to really appreciate popsicles and you can make those with your own produce as well!
Becky I’d love to see you take the skin of the tomatoes roast them in the oven to get a lil caramelization then freeze dry to make a tomato paste. Would be really curious how you like them vrs using the whole tomato
well Beki you are pronouncing Shakshouka the right way. I am from Tunisia although we make Shawshouka in a diffrent way , it's still an easy and good way to use fresh tomatos.
Tried the tomato paste recipe, my Roma's seemed to have more seeds and next time I will strain through a sieve. But, I will do it again. Roasting pan cleaned up beautiful with very hot water. My GE stove has a griddle burner and that worked really well with the roaster pan. Thanks for all the wonderful ideas, can't wait for the next videos to come out.
This young lady loves what she does ❤
Hi Victoria 😊
Another inspiring video!
Love all those recipes ❤
I love making cakes in my air fryer.
Much more economic than putting main oven on.
I have also taught my youngest daughter to use it for her pizzas, chips, chicken etc. And you're absolutely right, it's so much safer! I'm a convert and I won't revert back to conventional cooking!!! Thank you for all your content. Love it. 😊
I am new to your channel You have caught my attention I’m spending most of my day watching your videos and enjoying them immensely thumbs up.
Bless you and your new family.
Thank you for sharing all that you do but, all family need Privacy.
Really enjoying your Videos with your mother and mother-in-law cooking and traveling together. Your mom is a hoot
All children need is lovely parents the rest comes natural.
Again thank you for such an Informative😊 channel
It’s so satisfying to see you you clean the beds from all those dead plants😊
You can save time by running a few inches of water into your plugged sink - dump tomatoes in water, fill sink with water to cover the produce, swish them all around and use your colander in a big bowl to drain. LOVE LOVE LOVE your channel! Like others have said - you inspire me and help me get my self in gear! Have a terrific rest of your summer. 😊
Well done indeed. Lots of very good ideas, even for an old girl like me, thank you
I love those knives and cookware you use!!
