    INGREDIENTS:
    Potato(आलू)
    Cauliflower(फूल गोभी)
    Baby Gourd/Tinda(टिण्डे)
    Cluster Beans/Gavar Fali(गँवार फली)
    Green Chilli(हरी मिर्च)
    Eggplant(बैंगन)
    Ladyfinger(भिण्डी)
    Oil(तेल) - For Frying
    Lotus Stem/Root(कमल ककड़ी)
    Oil(तेल) - 1 Serving Spoon
    Gram Flour(बेसन) 1 Serving Spoon + 1 Spoon
    Cumin Seeds(जीरा)- 1 Tsp
    Mustard Seeds(राई) -1 Tsp
    Fenugreek Seeds(मैथी दाना) - 1 Tsp
    Asafoetida/Hing Powder(हींग पाउडर) - 1-2 Pinch
    Turmeric Powder(हल्दी पाउडर) - 1 Tsp
    Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) -1 Tsp
    Crushed Red Chilli(कुटी हुई लाल मिर्च) - 1/2 Tsp
    Water(पानी) - 2 Jug
    Salt(नमक) - 2 to 2.5 Tsp or As Per Taste
    Tomato(टमाटर) - 3
    Raw Mango(कैरी) - Some
    Kokum(कोकम) - Some
    Coriander Leaves(धनिया पत्ती) - Some
    For Tadka:
    Oil(तेल) -1-2 Spoon
    Cumin Seeds(जीरा) - 1/2 Tsp
    Dried Red Chilli(सूखी लाल मिर्च) -2
    Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) -1/2 Tsp
    RECIPE:
    Soak the kokum in boiling hot water for 1 hour. Take some Lotus Roos/Stem. Cut & boil it by adding some Salt to it. Peel and cut Potatoes & Tinda into cubes. Cut the Cluster Beans/Gavar Fali, Ladyfinger/Bhindi & Green Chilli, into one piece. Cut Cauliflower & Eggplant/Brinjal into big pieces. Except Bhindi put all the veggies in the water till for ready to be used. Keep the pan on the flame, put some Oil & fry Eggplant, Cauliflower, Bhindi n Lotus Stem individually on high flame till the veggies have fried and become crispy & then take them out.
    For Kadhi, keep the pan for heating & put some Oil & Gram Flour. Cook & stir till it starts to change colour to brown. Keep stir-frying as otherwise, the Besan will burn. Then put Cumin Seeds, Mustard Seeds, Fenugreek Seeds & Asafoetida/Hing Powder in it & cook till they crackle. Turn low the heat. Immediately, add Turmeric, Kashmiri Red Chilli Powder & Crushed Red Chilli & mix well. While stirring constantly, slowly add 2 Jug of Water gradually. Ensure that there are no lumps. When it starts boiling then put finely chopped Tomato & non-fried Veggies like - Tinda, Potato, Green Chilli, Gavar Fali, Raw Mango & boiled Lotus Root. Cover and let the vegetables cook till done. Finally, add soaked Kokum, and fried Veggies & cook them well. Then put some Coriander Leaves & let the Sindhi Kadhi simmer for 5 minutes.
    For Tadka, take a pan, put Oil, Cumin Seeds, Dried Red Chilli & Kashmiri Red Chilli Powder & cook it. Then put the Tadka on the Kadhi. Serve hot Sindhi Kokum Kadhi with Chawal/Bhuga Chawal & Meethi/Sweet Boondi & Alu/Arbi Tuk.
