I'm sure you could sub tofu for the chicken and it would be amazing! I used to eat those noodles (Shirataki aka Miracle noodles) when I was on a diet because they have no calories and no carbs. They don't smell the greatest out of the package... but just rinse them off. They absorb the flavor of whatever sauce you use! 😉
Do you know what kind of Noddles they are? Name of the sauce? I wish she could have pinned the recipe here.
