Every cheese matured more than 6 months can be eaten by lactose intolerand people. I love Grana Padano and I’m very sensitive to lactose, never have any stomach issues with it.
The lactose basically just goes away in the aging process, well what little is left after the processing phase. The act of making cheese by its very nature removes a large portion of the lactose from the dairy since the average cheese has about 97% of the lactose removed when the curd is separated from the whey. The various other ingredients plus the aging process can lead to a cheese containing as little as 1% lactose (which comes out to less than a half-gram of lactose per ounce of cheese). If someone is lactose intolerant they should experiment with different types of cheeses to see which ones they can and cannot handle since dairy is quite good for you, lots of flavour and vitamins/proteins. @@mantailuaa

As I understand it, people can eat cheese even if they are lactose-intolerant, because the lactose is fermented out of the milk during the milk-souring process. Some people may have allergies to other things in cheese but they won't be running into lactose. There was that one time I had some fruit cheese - all the _visible_ ingredients were ones I can eat, a cheese that resembles cream cheese, dried apricot, some generic currants, sultanas and raisins, brandy, poppy seeds. But, whether it was a preservative or what, I don't know, but my mouth turned into instant blood blisters, and since I'd put the fruit cheese on some double-baked bread, that ended up like chewing on razor blades. I find it extraordinary that Brooklyn Beckham is happy to blow what for most people would be a couple of months' worth of grocery money on one lunch.
I'd say the reason that pasta looked so dry was because it had cooled so much and had congealed. You really shouldn't be able to slice your pasta with a fork like that.

Past with sauces, ESPECIALLY cheese sauces, are best when still warm. Cool pasta will stiffen plus suck up water in the sauce making the sauce too thick.

As a former cheesemonger, two things made me cringe: first he used grana padano instead of parmigiano regiano. (Wich makes it less expensive but also less tasty) Second he did cut the wheel of cheese in the middle instead of the top for this kind of use. I'm not sure if my ancestors on my Dad's side would cry or not. From what I understand they came from an area that was on the border between Italy and France that would change hands every now and again. So I suppose it would boil down to if they considered themselves French or Italian. Though I suppose the area in question does potentially raise the likelihood of our last name having more of an Italian origin instead of a Spanish or Portuguese one.

No matter how rich he is, he’s just desperate for validation (that “promise?” broke my heart). Poor kid.
With all their wealth he has no advanced education. That would require work and brains. The only way to make a lot of money is to model or work in the entertainment industry. His culinary "expertise" is all for show. The only way he will be cooking is through the entertainment medium. He won't be working in a restaurant as a top chef, which is what he should do if he was seriously wanting to develop his culinary skills. Most skilled chefs have worked for years honing their craft in restaurants.

As I understand it, people can eat cheese even if they are lactose-intolerant, because the lactose is fermented out of the milk during the milk-souring process.
Some people may have allergies to other things in cheese but they won't be running into lactose.
There was that one time I had some fruit cheese - all the _visible_ ingredients were ones I can eat, a cheese that resembles cream cheese, dried apricot, some generic currants, sultanas and raisins, brandy, poppy seeds. But, whether it was a preservative or what, I don't know, but my mouth turned into instant blood blisters, and since I'd put the fruit cheese on some double-baked bread, that ended up like chewing on razor blades.
I find it extraordinary that Brooklyn Beckham is happy to blow what for most people would be a couple of months' worth of grocery money on one lunch.

Stopping cooking to film can either burn the dish or, quite the opposite, let it cool too much, with this being a distinct case in point. Past with sauces, ESPECIALLY cheese sauces, are best when still warm. Cool pasta will stiffen plus suck up water in the sauce making the sauce too thick.

As a former cheesemonger, two things made me cringe:
first he used grana padano instead of parmigiano regiano. (Wich makes it less expensive but also less tasty)
Second he did cut the wheel of cheese in the middle instead of the top for this kind of use. Now he is going to have twice as much work taking care of his cheese, protecting it from air, scraping the mold and aging it in general.
I was wondering about this. Surely ppl aren’t dropping nearly $1K on a wheel of cheese as a once-off. What happens to it now?

All my ancestors cry (or, more precisely "si rivoltano nella tomba") whenever a wheel of parmigiano/grana gets used that way outside of restaurants, because you have to pack it very well and use it fast, or else it gets moldy instantly because of the moisture introduced into it by this "dish".
You could feed a small italian family for a week with that much cheese (no more than that, because grana is life).
(they're also horrified whenever they see cream in pasta outside of "panna e funghi" or "zarina" etc)
