Very straightforward info... definitely helps when you remove a lot of the jargon...much as when first approaching wine...the language used by some is intimating... though useful to those who understand it...it leaves newcomers out in the cold... Great video!!!
Maybe you meant for the video to say polishing rather than sharpening? You did talk briefly about sharpening but really you spent the video polishing. Still a nice primer to things and I always send people your way for first stones as I think your grading is accurate and sides/prices are reasonable. Maybe for an actual sharpening video showing how the swarf generates for different hardness/fineness/fastness would be valuable rather than the polishing aspect.
There is a few variables to be mindful of such as the smith's treatment of Aogami and the natural stone you pair with it, but overall we've had great success sharpening Aogami 1 & 2 (and even Aogami Super, though it can be a bit more finicky) on softer natural stones around 3-4 hardness. Honestly, finding an affordable options like one of our short or irregular sized assorted stones is a great way to dip your toe in the natural stone water without spending hella $$$ to see if you like the results on your knife.
