Slow living during last days of late summer - picking blackberries, enjoying the last of August sunshine and exploring English countryside.

Blackberry clafoutis (dairy free, as my husband can't have dairy, but I'll link the original recipe I adapted from as well)
Preheat the oven to 170C/ 338F
300g of blackberries
400g soy yoghurt (or cream if you want to make the original version)
20ml milk (I used dairy free, but feel free to use dairy)
100g sugar
125g plain white flour
80g almond flour
2 eggs + 1 egg yolk
Vanilla
Pinch of salt
1 extra tbsp of flour
1 extra tbsp of sugar
Mix blackberries with 1 tbsp of flour and 1 tbsp of sugar & set aside.
Whisk eggs and sugar until light and creamy. Add soy yoghurt, vanilla, pinch of salt and milk, mix well.
Gently mix in flour and almond meal.
The batter will be quite liquid in consistency - that's how it's supposed to be. The cake is supposed to turn out creamy on the inside.
Grease the cake tin with oil or butter (best to use the solid one, without the removable bottom - cast iron or ceramic would be ideal)
Place your blackberries at the bottom & pour the batter on top.
Place in the oven for 35-50 mins at 170C/ 338F
Let it cool down for 15 mins & enjoy either warm or cold.

Watching summer gradually fade away is so romantic and sad at the same time. The past week has closed the bathing season on my river, and the weather already requires wearing warmer clothes. I enjoy the late summer days a lot when all the colors start changing and the flowers are still blooming abundantly. I'm the same with baking, can't stick to a recipe and always improvise which has the downside that when something turns out really great, I don't have the exact measurements anymore and can not replicate it again. I cannot wait for autumn to arrive. I used to say that the only thing I like about summer is that autumn comes right after it, but over the years I've been learning to appreciate summer for what it brings. I still find it hard to hold much love for it, but I must say that some of the magical parts of it for me include; summer nights, bbqs, blackberry season, camping, summer sunsets, and the way the bugs look like fairies dancing in the sunlight.

Aah I absolutely agree with you! Autumn is my favourite too, but all these summer activities are so lovely and so great for the soul. Though this summer was so cold that none of these activities were even possible 🙈
@@IamDaria Ahhh that sounds so nice! Unfortunately, I think the reason I hate summer so much is the unbearable heat that I've always gone through, as well as suffering through fire season and living with constant smoke in the air. I'm sure I'd enjoy summer more if I lived somewhere where it was a bit milder! I don't do well in the heat at all and when it's 107 degrees (42 celsius), it makes it difficult to enjoy anything.
The sad but romantic feeling that the change of season brings is always incredibly inspiring. It is very valuable to live in a place where the change of each season is not just visible in the calendar, but is felt by the body and soul. Summer is great, but in my understanding, over time it makes the body a little lazy (it's hard to describe).
By the way, Ellary, I recently watched your entire channel, it's beautiful! It's a pity that it is rarely updated.

@@nevsemcomilfo Agreed, experiencing the changing seasons is one of the greatest joys in life and I feel very privileged to have been able to feel them so deeply. About summer making your body feel lazy, I get that. I always feel extremely lethargic in the summer and quite spry in the colder months.

This is nearly exactly how I felt today when looking at the vale below - 1st of September (well, except for the clafoutis). Now a little later we will remember of what Albert Samain wrote is his poem, "Automne":

But for the moment, there is no anxiety yet, just an hesitation, a slight concern perhaps... Something is going to change, we still don't know exactly what, although we can feel kind of a premonition...
