    Dear Lana, thank you for this recipe. My mother was Cuban and was an amazing cook but she never taught me her ways, because she started developing dementia when I was young. I married a Mexican and learned to cook it a different way but it’s not the same as my mom’s. This is the closest recipe I have found so far and made me cry when I tried it. My mommy passed away last year, but eating this arroz con pollo makes me feel better and that way my daughters who didn’t get to know my mom can enjoy the taste of their Cuban heritage.

    Lana, I grew up in Miami, a ten minute bike ride from Calle Ocho. I moved to Atlanta in 1982 and my trips to Miami ended more than a decade ago because all my remaining family had passed. I had some dear Jewban friends, as one of my best friends married their daughter and I had many opportunities to learn to cook Cuban. Somehow I never tried to make arroz con pollo. My small family now live on top of a mountain in rural Georgia and although we have tons of Mexican food here, Cuban food is at least two hours away in Atlanta. My wife has tried it several times and only likes my picadillo and slow-cooked frijoles negros. Yesterday I spent several hours making sure I followed your recipe, substituting real saffron for the Bijol and used chicken broth. The only beer I had was Guinness and I worried it would not work. It did perfectly. I wanted to make sure my version was Kosher so I added two links of sweet Italian sausage to the recipe. My wife kept coming into the kitchen and asked me what I was making. I said, "chicken and rice." She started nooging me, asking "Is it Mexican? "Well yes," I said, "But it could be Spanish, Puerto Rican, Cuban etc." She turned up her nose and asked me what it was called. I replied, "Majon con pelo." She is from South Carolina and English is not her first language, so when I said that she stormed off to the bedroom to watch TV, having no clue what I said and I spent the next two hours giggling as I made dinner. She took one bite and went back for thirds. I am trying your frijole negros recipe next. Thank you!

      Hahahahaha, that was too funny! I am glad she liked it though, or you would of really been in trouble. My dad lived in Marrietta, GA for a bit and he used to tell me how frustrating it was trying to find good Cuban food. We've lived all over AR, VA, AZ, MI, FL, and NY so I can totally relate to your frustration. Honestly, I have not found that the air fryer oven does a great job on croquettas, fresh or frozen. I just really prefer them in a pan or deep fried. I do have a great recipe for them from scratch though. If you look me up on Facebook and PM me I can send you a picture.

    As someone who is cuban and cooked arroz con pollo a lot in clay pots with my abuelo. You did this perfect and I think your the only instant pot video that knows to use beer (we use Coronas 😂) and add bay leaves many of the other ones miss that. Keep it up, awesome work

    Thank you so much! I tweaked the recipe based on what I had on hand and it still came out great. I used the measuring cup for my rice cooker as suggested, but I also measured the water to the line that I would if I were making it in the rice cooker and my rice turned out perfect! I was so worried I would have mushy rice but it’s perfect. I can’t wait to order the Bijol thanks for that tip! Keep the recipes coming! You’re a gem ❤️

      @@LanaUnderPressure I made it the same night, and had leftovers for brunch. We used black beans instead of mixed vegetables. I subbed the beer for Organic vegetable broth. I used your seasoning measurements, with chicken thighs, and it was delicious. We loved every bite. Tasted and looked just like our favorite Spanish restaurant rice.

    Hola! I've been wanting to have Cuban Arroz con Pollo and can't travel to Miami for now. I've been looking for a recipe with the beer added. Some recipes just don't use it. It
    isn't Cuban if it doesn't have beer! Love using the chicken broth instead of plain water. Thanks for all your tips! My family loved it and my husband said it

      @@LanaUnderPressure No worries. I hope everything is getting back to normal for you. :) The recipe turned out perfect. I'm defrosting some pulled pork for sandwiches today. I'll grill them on brioche with cheese in my Air Fryer oven on the top shelf. 400 for 4 minutes open faced. yum That's the perfect setting for browning open faced hamburger buns, btw. Top rack, 4 mins, 400F. Looking forward to your next recipe.

    Ay Dios mio. Ahora acabo de hacer esta receta y se quedo de lo mas rico!! Gracias!! The beer is a must! I only had two cups of rice left and it was actually perfect with the amount of chicken i had too. Just had to adjust the liquid. So easy- 10 min on High and NPR 15 minutes the rice came out perfect not mushy at all. 100 % making this in the weekly dinner rotation.

      @@LanaUnderPressure First batch wasn't a success because I was getting the dreaded "food burn" message. And I did scrape thoroughly exactly like you showed us. I don't know what I was doing wrong, but the meat didn't get done to my liking because of that.
      So I made a second batch. All the same ingredients, but I cooked the meat first for 10 minutes on max (I've got the "Max" version) and then put the rice in on top of it and turned the pot on "rice". It came out beyond expectations!
      My wife absolutely loved it, which is always the greatest praise ;)

      @@ZdenekHadascok That's fantastic! My arroz con pollo recipe took me 7 tries to get it right. Rice is one of the hardest things to cook in the IP but once you get it, it's amazing. It sounds like since beef cooks longer than chicken, it needed that extra time. That was brilliant idea to cook the meat a bit first. Bravo!

    Hi Lana when I use the IP measuring cup for the rice do I use the same measuring cup for the liqiid for cooking the rice please advise thank you

    Hi, can you explain how to substitute with chicken broth in more detail? I want to use it instead of Bullion but I'm not sure how much water and beer etc. Please help? 🤗

      Sure, you would do a straight substitution for the water. So it would be 2 cups broth and 1 1/4 cups beer.

      Thank you! So I put a clip on the liner and the pot and it keeps the liner from spinning when you stir things. I talk about it in other videos but I forgot to mentón it in this one. :)

    Very authentic! I'm Cuban so I know! BUT, if you use a rice cooker cup, and want normal rice texture, reduce liquid by 1/2 cup total. Or add 2 - 3 more ounces of rice. Otherwise it comes out "asopado" (soupy). Some people love it either way. Great taste!

      Hi. Sorry it took me so long to respond. I usually reply very quickly.
      I think curcuma powder is made from turmeric but I have never cooked with it before. Bijol doesn't have much of a flavor, but if curcuma does, I would not add as much. I've never cooked with it before so I'm sorry I can't give you better advice. If you make it I would love to know how it comes out.

      Gracias! Now I don't rinse. Rice in the US and most countries is precleaned so the only reason to rinse is to take off the extra startch. But in this recipe, it cooks better with it.

    Hi, I made this today. I did everything exactly like you said but I had little problem. Once I started to pressure cook I got the burn food message. I did everything I was supposed to do. Vent, open, scrap and even added more water. Well I kept turning it back on and I kept getting the message. After the 4th time I opened it I noticed it was cooked already and it tasted really good lol. Can you please give me some input? It came out great but it didn't really pressure cook? Not sure. Thanks

      Oh no. Rice is one of the hardest things to cook in the IP and then add other ingredients it can be tricky. Do you have a new pot ( have you used it a lot)? Sometimes I find things stick more in newer pots just like using a new cast iron pan.

    I’m going to try this using my instant pot. Is this a fool proof recipe? Every time I make arroz con pollo on the stove, the rice either ends up too mushy and some parts are crunchy and undercooked :(

      I would add some of the juice before cooking but add the olive right before you pressure cooker the rice.

    My rice came out very mushy. I used basmati and I rinsed it. Should I not have rinsed/soaked it?

      Hi. Yes using the correct rice is important because basmati has a different cooking time. Also rinsing will learn the cooking time too.

      Can you find Sazon with asafran? If not you can leave it out or order on line. It just won't have the rich yellow color.

      Greta question. A rice cup is a little more than 3/4 cup. It's exactly 180 ml and a standard cup is 240.

      I just don't like the taste of parboiled rice and also with a pressure cooker, the times for rice are very different. You can use parboiled but then you might have to adjust the time, which I have not done. The thing with recipes for the electric pressure cookers is that each recipe is specific for that ingredient.

      Hi. The problem with that is then your pieces will be bigger, take more time to cook and the rice would then be over cooked. Traditional way on the stove you do leave the bone in, but that's hard to do when converting.
