Donquixote is a name inspired by the Spanish book "Don quijote de la mancha" a famous book. It will be interesting if you at least read a synopsis to understand how Odas brain operate. Oh and the appearance of Gan Fall the God of Skypiea before Enel was inspired by Don Quijote too, both character appear in the same arc.
It was such an influencial novel, there's even an English word that derives from the name: 'quixotic'. There are even other characters from that book whose name is used in OP. Oda borrows from Greek, Japanese, Norse, Hindu, Chinese, Aztec, Carribean, history/mythology and such novels like Gulliver's travels, Dante's inferno, Aesop, Brothers Grimm, Alice in Wonderland... plus all the homage to pop culture... its actually unfathomably crazzyyyyy. Truly a living genius of our times. OP gets even better if you know or learn the references.
So I don't think its clearly stated anywhere in OP, but the whole schtick of Law "Sugeon of Death" is that he is first and foremost a doctor. And by Hipporatic LAW, he can do no harm via medicine. So even if body parts are chopped up and/or taken out, they still function. I dont know if that's Law's conscious decision, or the fruit's limitation, but fun to think about. (This is my personal theory, someone correct me if I'm wrong, plz)
