I could be wrong, but I think I remember Diane Ladd saying somewhere that she add-libbed the "jack job an a paper sack" line, that she made it up and it didn't really mean anything, but it just seemed like something Flo would have said.
Thanks for this. That's the scene I was looking for. I watched this film for the first time last night on TCM and that was one of my favorite scenes. Even though I couldn't tell what she said it was still funny because of Diane Ladd's reaction to Mel when she said it. I played it back several times but I just couldn't hear anything other than "shit."

Diane Ladd should have won the Oscar , even though they gave it to Ingrid Bergman for a role that didn't really stand out in a large ensemble.
So Vic Tayback was in the movie and Alice sitcom!
The movie diner was kind of a dump, but pretty populated. The TV diner had sparse customers, but it was big and beautiful and brightly lit.
Good movie of old good times.

That was classic
Flo in this movie was much more realistic and three-dimensional than the TV series. I liked her in the latter, but she was totally sitcom.
