Gluten free wouldn't dissolve in water. I think she just needed xanthan gum to make it hold together better. Xanthan gum is a life saver for gluten free foods. My hubby of 10 years is celiac and I have had to learn how to cook/bake gluten free. Rice flour makes the most crispy, light and delicious fried chicken btw, no xanthan gum needed.
@Asteri En I don't think it's because gluten-free flour can't dissolve in water; gluten-free flour doesn't form gluten strands, which means it has zero elasticity and won't hold together properly. Xanthan gum is, if I remember correctly, a binder used to thicken foods. It helps bind everything together and keep it from falling apart.
I am NOT a cook, I know just about nothing about nothing, but I have a wonderful friend with Celiac who invited me to her family's Thanksgiving because my family lives far away... and maybe the restaurant they ordered from didn't know about xanthan gum? Because just about every bread item I put in my mouth that day turned into dust immediately. (Obviously, I was very appreciative and complimentary, because I'm a grown woman getting cooked Thanksgiving by someone else - I am very lucky! But it made me a little sad. I know my friend struggles sticking to the diet, and it helped me see why, but gluten makes her so sick.)

Especially when using rice flour, which inexplicably is the most common option even though it’s the most sandy. (I am not gluten free now but I was for two years as a child - 20 years ago before the craze - and hated every minute. My dad is gluten free now and I will occasionally eat his food, accidentally or on purpose, so I’ve had the opportunity to see how things have changed… or sometimes not.)

If you guys ever wanna do this again you should use rice flour for the dough. Regular dumpling dough is very springy and that's from the gluten. Rice flour will mimic the texture much better because it's chewy.

Sapphire Orchid I let my mom give him a tiny bit of turkey in his bowl on the floor so its almost not like human food but that's only because it was just straight up meat and I know it won't hurt him. My rule in general, minus the holiday, is no human food for at least the first year. If I can make it to then he probably won't get human food at all. I bought him like super special cat treats that are just dehydrated chicken and like bouji kitten food that has kale as an ingredient so that will have to suffice lol.

If you guys ever wanna do this again you should use rice flour for the dough. Regular dumpling dough is very springy and that's from the gluten. Rice flour will mimic the texture much better because it's chewy.

Sapphire Orchid I let my mom give him a tiny bit of turkey in his bowl on the floor so its almost not like human food but that's only because it was just straight up meat and I know it won't hurt him. My rule in general, minus the holiday, is no human food for at least the first year. If I can make it to then he probably won't get human food at all. I bought him like super special cat treats that are just dehydrated chicken and like bouji kitten food that has kale as an ingredient so that will have to suffice lol.
