Dude! This channel is amazing, I am sooo glad I found it. My mom is from St. Elizabeth in Alligator Pond and I'm living in an area of Canada where I don't get the chance to hang out with any Jamaicans. I love that you added citrus to the jerk rub. When cooking chicken, i soak 5-10 mins in salt and sour orange (cybil orange) juice. Then rinse and season with herbs
