CORRECTION: On the Presto 23 quart canner- The very bottom line on the inside of the canner is the fill line for pressure canning. The other 2 lines, higher up, have to do with using it as a water bath canner without pressurisation which is only for high acid foods, never for meat or normal fruits and vegetables. Whether you are using the Presto to pressure can one or 2 layers of jars, the bottom most line, is line you want to fill the water to prior to placing the jars in the canner. Just place the rack in the bottom and fill the pressure canner to the bottom most line then add the jars. The Presto canner comes to pressure much faster due to its design. Putting the jars entirely or substantially under water can reduce effective pressure and thus the temperature in the jars hence causing possible contaminated food. Just fill to the very bottom line which is just an inch or so from the bottom for best practice. Also Vaseline is a petroleum product and is not in the food-safe refinement level. Vaseline also can tend to break down the rubber of the gasket. It is perfectly fine to use the gasket without adding any oil substance. Just clean it after each use.
Presto require 3 quarts of water no matter how many jars you have. Also the large round silver things is a lid lock not a safety plug. The round rubber plug is the only safety plug on the canner
I bought my Presto 23 quart pressure canner in 1974 and am still using it. My instruction book states to put 3 quarts of water in the bottom whether single stack or double stack.
I love my All American Pressure Canner that I got from my better half for Christmas!!! It is built to last and made so much better than Presto in my opinion! No gasket failure to worry about and made out of wonderfully crafted steel. But hope that everyone loves what they are using! Thanks for sharing this with us!
Something that should also be taking into consideration is what kind of stovetop you have to work with. I have recently been learning about canning and bought the Presto 23 quart. Problem was I have a glass top stove and the manual for my stove did not come with the house when I got it. After watching more utube videos I decided to return it because my particular stove the burner is only either 6" or 10" and the bottom of the Presto canner is 8". I just didnt want to risk it.
@@lorettacatron6670 You definately do not want to get the All American, because the bottom of the canner is not flat. I ended up getting the 16 Qrt Presto, not the 23 Qrt. I couldn't find my stove's owner manual and another Utuber suggested the smaller Presto since weight might be a consideration on the glass top.
my mother, who is in her late 60’s, was given an all american canner in the late 1970’s by my grandmother and her sister, who canned together all the time. they were upgrading to a bigger canner and gave it away to mom after years of use. my mother didn’t use it for decades. last fee years my mom has been using it nonstop. she replaced a few pieces to unsure working condition. this christmas she sent me an all american twice the size of hers. the all americans are heirlooms. my daughters will be using mine decades from now i hope.

That low one is the water level...The other marks are used if you are using it as a large pressure cooker and gives you the maximum level for food/liquid when doing so. ... You ALWAYS put 3 quarts of water into the canner no matter how many jars you put it... stacked jars are the same amount. It is in the manual..... The manual is VERY good.

I've never had the weight spin on my All American. It jiggles and small steam sound ideally 2-4 times per minute. My stove isn't perfectly level so maybe that's why. I greased the seal area with some food grade grease (originally to repack gears in KitchenAid) and I've washed it multiple times and the grease is still there, no degredation. Just an FYI for anyone with that type of grease...
With the presto, get a couple of spare seals and overpressure plugs, in case. I wash the gasket oring and dry it, then occasionally oil it with mineral oil. Lasts quite a while, but eventually they start leaking. To test, I close the lid and slowly rock back and forth. As long as there is some resistance in the fully closed position, should be ok. If not, some heavy mineral oil inside and out of the ring will fix it for a few more batches. The American canner has no such issue, just really take care of the mating surfaces. The upside of the presto is, that it can use the 50332 jiggler regulator (3 part). Not included with the canner. Bought separately, you can use "weighted" washers or weights (not included), each calibrated to 1 psi to get any rating you want. I also have a 1/2 psi washer... When the gauge is new, weigh the reg and washers, and record the psi you get with different washer combinations. Then for next season, just compare the known washer/weight with the psi readings on the gauge. Don't have to bring the gauge in for testing every year, as you now do this yourself every batch. The American canner has a different jiggler regulator, and the above 1 or 1/2 psi washer concept does not work. The Presto with the weighted washers and 50332 reg is the best function with the selectable PSI jiggler. Trying to maintain a particular PSI setting (only using the stove heat), without this, is bad and time consuming in several ways. Without the 50332, I'd pick the American Canner only for this reason. Also for this reason, the presto gauge canners were sold at garage sales almost unused for really cheap... Paid $10 for my 23 qt with gauge. The American canner will last "forever" with no extra parts/seals but with more limited psi selection, at "only" 3 settings. Just a few thoughts, good video and happy canning !!!
Nice video, informative. I never used an American Canner and was interested in them. Regarding staining, yes, that is a hard water stain. I have two presto canners and use basic city water, with only some light staining over 20 years. I loaned one out to a fellow with well water and it came back with that dark staining when returned a month later. It cleaned easily, (mostly, looks like it will always have a dark tint now) but it should never be an issue as long as it does not form in the vent hole or pressure gauge.
Thanks for posting this. For financial reasons I opted to get the presto pressure canner as it will be my first. I definitely want an All American eventually as it will be an upgrade much like it was from my cosori food dehydrator to my Excalibur dehydrators
Dont bother with the AA. Too much work to get the lid just right or it wont seal. Even with the petroleum jelly. Tightening the lid is a process too. I just want to put on the lid and go I bought a presto and got rid of the AA.

Thanks for sharing your video. I have the same presto just a year old or so and one about 10+ years old and the canning water mark is much lower then the one you are using on both of my canners. I was trying to see if you had that mark on your canner under the lime scale. My older canner is a 16 quart canner however it is the same diameter as the new 23 quart canner and the mark is the same on both canners. I think its like 3 quarts of water for canning. The upper lines are for pressure cooking limits as in never exceed food levels above these marks depending on what your cooking. Just a heads up I am sure it won't hurt anything to add water to the higher marks as long as the tops of the jars are not covered with water. Anyway I am going to pull the trigger on the All-American 30q so I can double stack quart jars. Thanks again for sharing.
I have an all american canner 931 for over a year and never used it. Well, I was going to use my presto canner and I can't find my pressure regulator so after an hour I decided to use the 931, but after all the transferring everything and got the lid on and turned it on and was waiting for the steam to come out, I noticed my dial gauge had a dent on top and the dial was at the bottom and sticking out the bottom. Do you have any idea what can be done. If I order a new gauge how to put a new one one.
On the All American, the dial gauge is not needed. Your instruction manual will say that you should always judge the pressure by the weighted gauge. If you choose to replace the dial gauge, your local Extension office should be able to help you get it on your canner.

If you have a glass top cook stove you can’t use the All American. The Presto 23 has an additional plate on the bottom that makes it acceptable for glass tops. If you have induction, I don’t think there’s any canner that can be used.

Yes, prices have really gone up in the last year...just as with prices on everything, unfortunately. I have seen them for $80, though....and I'm starting to see used but newish Prestos show up on Facebook Marketplace.
It’s a shame that they are trying to sell that all American for $500 or more on eBay and that the presto is going for several hundred now. They will not be available at all American until October and possibly later. People are gouging because of Covid. Very sad. And yes even the big companies like Amazon are in on it. Although I did order one from them one day when they had a very low price on there for about 3 hours. It is now 2 1/2 times the price I paid only a week later. The prices fluctuate from day today. However I have not actually received my canner yet so I have no idea if it will actually come as promised.
It is a bummer, for sure. I encourage people to look for used canners on Facebook Marketplace, Craigslist, garage sales, etc. Before using, just take a used pressure canner to your local extension office and they will inspect it for safety - for free.

Thanks for the video. But I believe you use 3 quarts of water in the Presto, regardless of your doing one or 2 layers. The water should never come way up high on the jars unless you are water bathing. Not for pressure canning.
My Presto has 2 water level lines on the inside. The lower one is for single layers of jars. The higher one is for double layers of jars. Neither brings the water level above the tops of the jars, as with water bath canning.

Mine has the two you showed and one at the 2 1/2 qt mark but it's really hard to see, I have to feel for the indention line with my finger. I have used pressure cookers for yrs.I bought a all american cause of the no rubber seal. But I cant use it because the lid wont sit right no mater what I do and it leaks. So a expensive worthless canner. The company wont anwser either. So I bought a presto which works just fine and less expensive. The seals have never been a issue with my regular pressure cookers. Like you I also bought the presto rocker weight which works better than the standard weight that comes with the presto. Thanku for your vid sure wish it would have been out sooner.
I thought you only needed 3 quarts of water in the presto but you need 3 inches in the all American. Which is more water than 3 quarts. Maybe I have that wrong.
The big difference that Presto canners have 12,000 BTU limit. You cannot use common outdoor gas stove as it will weaken and warp the metal unless you take down the flame to the minimal. My outdoor stove is 30,000 BTU. At minimal flame the wind constantly blow out the flame. Anything more it would warp and damage the unit. All American canners do not have this limit.

My All American instructions says to apply the oil to the inside rim of the pot not to the lid.

Not at all. But it would be difficult, perhaps, if you had arthritis or weak arms. The Presto is definitely lighter and easier to lift.

Prices are up for the canners now. I just bought a Presto 23 qt. in Erie, PA the other day. Now it costs $155.00.
They are less than that where I am, but yes, inflation is hitting hard!

The big difference that Presto canners have 12,000 BTU limit. You cannot use common outdoor gas stove as it will weaken and warp the metal unless you take down the flame to the minimal. My outdoor stove is 30,000 BTU. At minimal flame the wind constantly blow out the flame. Anything more it would warp and damage the unit. All American canners do not have this limit.
