Sourdough Scoring - Leaf

  • This video takes you through the following steps:
    Removing your sourdough from the banneton
    Dusting off the excess flour
    Applying flour
    Scoring (cutting) the dough with a leaf pattern
    The dough is placed into a hot, preheated Dutch Oven, I have not pre-heated the lid of the Dutch Oven.
    For the video I have used a craft knife to score (cut) the dough. You can also use a lame.

    Beautiful scoring 😍 i‘ve never thought using craft knife. Thanks for the tip. And btw why the DO lid is not preheated? I‘m not a DO fan 😬 but i‘m trying to bake more in DO to get a good result when i do motive scoring. Still struggling with the flour that fade away after baking 😅

      Thankyou Rika. I'm glad it was helpful. The Dutch oven, with its thick cast iron walls, offers a thermal mass to ensure a temperature-stable baking environment. Additionally, the sealed interior traps steam which is a beneficial element to baking dough. Moisture in the oven during the beginning part of baking allows your bread to rise fully, deepens the crust color, I use a cast iron pot.

      I'm not big on the Dutch oven either, but reading your comment it does sound like a heat stabilizer

    Beautiful! Was your dough cold when you scored it? It looked like your Dutch oven was not preheated when you placed you dough into it. Was that for the purpose of the video or do you bake in a cold Dutch oven?

      Thankyou so much for your feedback. Please feel free to like and subscribe to my channel. My dough was cold when I scored it. I put my Dutch Oven into my oven so they both pre-heat together, then I take my DO out of the oven when the dough has been scored. Hope this helps. Happy baking 🙂
