8 Sourdough Bread Scoring Tips and Design Ideas

  • Scoring sourdough can be as daunting as the whole dough-making process if you don't have a grasp of techniques that contribute to a consistent, controlled, and optimal rise of your sourdough bread. This video is intended to help beginner sourdough bread bakers score their dough with confidence and provides different scoring designs which can serve as starting point for creating beautifully designed sourdough loaves. As the old saying goes, we eat first with our eyes.

    One of the prettiest I've seen. Also love the music very harmonious and a pleasure to watch! I tried to replicate this gorgeous design but sadly the top burst open. I am new to this and wondered if I should have placed a deeper score somewhere to prevent this. Maybe my lines where too close together.

      Thanks, Victoria! I'm glad you like the video and music! In elaborate scores such as these, the Sourdough need to ferment longer. Try the poke test, if it springs back all the way - that's the type that bursts open and gives a great ear. You'll want to ferment it longer so that when you poke, it doesn't spring all the way back.

    Try scoring your dough deeper so that the loaves are able to expand and release moisture properly. Your bake times will decrease as well.

    Hi there, great video. I’m really inspired to try out some decorative scores but I’m sure I have a long way to go. Id like to ask - when you do the main slash is this deeper than the small decorative cuts? Would the small cuts also be between 1/4 and 1/2 inch deep? The small cuts don’t look as deep as this. Also does the cheese wire actually cut in to the dough or merely mark the surface?
    Final question - I always thought that a slash had to be done pretty quick to ensure the tension doesn’t collapse before going in oven. But are you saying that a less hydrated dough is more resilient and can hold its shape longer when scoring?

      For this video I used rice flour but I found apf works well too. 😊

    After the mix for the first step, it's pretty dry. Will it be okay? I'm letting it rise overnight for Thanksgiving tomorrow.
