I have my own technique for cooking salmon, but I'm always open to new ideas. Occasionally I'll look up videos just to see how others do theirs. I love how every single video has a slight variation.
Just made this and added a touch of maple syrup at the end to caramelize. My husband and I both agreed it was better than the nicest restaurant in town’s.

Wow that was an awesome no frills tutorial. I’m cooking wild caught sockeye salmon with the skin on . The filets have not had the scales removed. What is your advice as far as descaling goes. Thank You this was exactly what an amateur like me was looking for

The skin is so crispy with this technique compared to the flesh that it has a a natural tendency to want to separate - think a perfectly crispy Thanksgiving turkey skin on the turkey breast. If the skin were softer (aka “flabby”) it wouldn’t be as textually appealing in the mouth. With the rendered fat which creates the super crispy salmon skin, you’re getting a bit of “fish candy” as a bonus.

If you're going to eat the skin, why take it off in the first place. Leave it on and eat it with the fish. Or am I missing something.
