You should try Joppie Sauce. A dutch creation served with fries. Mayo, yellow curry powder, finely minced pickle and onion, black pepper and sugar to taste.

Just look at Babish and Weissman, they are still popular but their channels are unrecognizable from their first videos - in a bad way. They just cater to the lowest common denominator and algorithm trends. It’s possible to resist it, like ANTICHEF (still growing) and J Kenji Lopez Alt, but most channels creatively die off but stay alive by becoming content wheelhouses.

Banana ketchup is GOATED in the Philippines. Try finding Filipino brand ketchup. Aside from spiced vinegar/soy dipping sauce, banana ketchup is the usual go-to sauce for anything fried.
You want to boost that salsa to a full 10/teen? Ferment it. Take all the ingredients, moosh them a bit, and then either vacuum seal or press them down into their own juices and keep it under so it's not exposed to air. Protect from bugs with some sort of mesh. Then let it sit for a few days. The yeasty boys will start to do their thing. THEN blend it all up. Fermenting your salsa is a cheat code to min/max flavor and boost it beyond restaurant quality.

I think to all of you complaining that FC has more tech now or is more professional and doesnt match his old style. I just have to say that if its relatability youre failing to find, i think his older videos are a testament to what we can achieve with 0 tools in our house and he has already proved to us that even we can do this stuff without having to buy every ingredient and substitude half of and get something amazing, or even have the fancy grills and stuff that joshua has. Idk, i feel like this progression is warranted and good to see
I also make KWOOK’s sauce once every two weeks, BUT! I add basil, chilli powder, smoked paprika powder and Hungarian sausages (if you have smoked, the better!). Imo it makes it so much better
For why most store-bought mayo is white: there are a few reasons. First, it's mixed together with industrial machines that incorporate a lot more air and dilute the color. Second, eggs can actually emulsify a lot of oil. Like a lot. One egg yolk has enough emulsifiers to make up to about six to eight gallons of mayo (though that would be very had to do just because of mixing physics). So, they're using a much different ratio of egg to oil than most home cooks and chefs to maximize their profits. Third, they're using pretty cheap eggs so nowhere near as vibrant yolks. Finally, the eggs are pasteurized so they are safe to eat and have a longer shelf life which dulls the color a bit. All those factors combine to make it basically white rather than the off-yellow homemade mayo is.
