There's a lot of things in this edition of Yvonne in Japan that I like, but I think the thing that struck me most is just how happy you look in the entire vlog. It's literally coming through the screen and I can't help but smile right along with you. For future reference, I would definitely avoid opening a kitchen knife in public. Japan is pretty strict about knife laws because there have been a lot of mass stabbings. You can't openly carry a blade longer than 6 cm in public, that's why stores seal it in a box.
Honestly this was the perfect way to relax after a long work day. Plus it's really nice inspiration for my trip to Japan in the fall. A knife from Japan is a such an amazing souvenir, especially since Yvonne's been cooking so much. I'm going to go make myself some matcha now that's Yvonne's influenced me one again!

18:05 Love the knife. I too love nice knifes and have a few >100$ knives. But the knife that I use everyday is a cheap ~10$ knife from IKEA. When it comes to knifes I believe most people would be happiest using a cheap knife that they learned how to sharper and clean, such that it always is super sharp and clean when they need to use it. Why I love the knife you bought: I looks super cool, the santoku knife shape can be used for anything, it has an sharp edge all the way down to the handle (nice for chopping nuts, but be careful not to cut your self), The blade looks to be very thin and the knife looks to be about 170 mm (I don't like my knifes to bee too big for most everyday things, 150-160 mm is probably more me, but taste is subjective) Things that are hard to tell from the video: The handle looks a little small for my hands, it looks like the balancing point of the knife could be too far forward (I like the balancing point to be where my index finger is while cutting for maximum controle), the blade looks to be smooth a little too high up from the sharp edge, it might cause vegetables to stick to the knife when cutting. VG-10 is the steel type. There is a lot of marketing BS when it comes to knife steels, I tries google the material properties, but the only thing I could find was the composition and that they claim 60 HRC in hardness. If that is true this knife will be hard to sharpen (take a long time and be hard on your sharpening tools), but it will hold the edge well. I would probably sharpen this to a ~15 degree angle and never go higher than 20 degree on a knife like this. Keep it away from stone, sand, bone (clean your vegetables before cutting). With a hard steel and a thin edge (15 deg) there is a higher risk of chipping the edge, chipping is not the worst thing, but it will take a lot of time sharpening to remove a chip and you risk changing the profile of the knife edge if you are not careful. Looking forward to see you use it and hope you know how to sharpen a nice knife like this, so that it will keep sharp. (A knife like this will outlast you if you take good care for it) Clearly my favorit thing was the knife🤣

i do miss sugi bee garden honey, the local japanese shops used to have the 1000ml for $13 USD, but since covid the stores no longer carry it here, you showing it just reminded me they have a website, and in the past they didnt ship outside of asia, i thank you for reminding me i can now get my sugi honey fix international now. i have tried all the fruit infused flavors of the honey, mango and yuzu is still my favorite.

Love the knife.
I too love nice knifes and have a few >100$ knives.
