You've basically built a nexus then for a filter. One of the mayor factors why your koi are growing well is temperature, it's always warm (your cold temperatures are temperatures we sometimes see here in summer on the occasional bad day !)
like your vids, you are really handy in making a good working DIY system for a pond specially with this big amount of (big) fish, but why did you not make a (waterservice) skimmer, up to know since you have many times foam on the pond, let it run on a timer 3 times a day and all looks much "cleaner".
The bacteria will live in the bakki shower as long as the bacteria remains damp. If the media totally dries out then the bacteria dies. However, it can live for weeks/months if it's kept damp and has access to air. I wouldn't think it could have dried out in 24 hours

@@koiselectsa agreed.. unfortuantly I live in a country that has cold winters with snow and ice, each spring it is a struggle to get the kois immune system up and running and take care that they dont get sick.. Iam sorta planning to insulate the pond with thermosheets this winter, to keep the water a bit warmer than it would be without !

My experience has been best temperature is way 20's centigrade. Not too warm but just enough for fish to be active and

I only put my koi at the mud pond and they grew up very quickly
You said you got him at about 30cm how long before he got to 80+?
Simple answer is heat and they eat , in a place like sa they will grow easily

I have a skimmer - most of the water issues come from borehole water - not clear but very good quality

when you turn off our 2 showers doesn't that kill the beneficial bacteria? I have a monster shower and it produces alot of bubbles and foam like yours

Yes about 10% twice a week - good quality borehole water
My Dealer at PAN Intercorp is saying everyone in Japan is moving to 4ft depth Ponds. Something about swim bladder problems any deeper.
I've got a 5 -6ft pond never had issues

100 percent correct. Also just keeping them tip top - things like diseases parasites etc slow down growth

Good point I find fish kept healthy always growing - when they sick you lose time as they build strngth
