Several reasons. Quieter and much more efficient than the big RV furnace so saves a lot on propane plus uses no power which is important camping off grid. The radiant heat it puts out is nice compared to the forced air furnace.

FLIR users can spot an animal’s heat signature in complete darkness or heavy cover. Without camouflage or cover, animals are unable to forage or move around after dark. If you are using it as a tool, looking under the hood, no worries. If you are in nature using it, you are locating or scouting wildlife at least, and breaking the law. Your state’s laws may vary.

This was recently reported, and why I brought it up: Oregon State Police Fish and Wildlife (OSP F&W) Troopers arrested 13 individuals and seized 14 infrared thermal imaging devices, one rifle and four deer in an operation that followed months of investigation into the subjects’ use of Forward-Looking Infrared, or FLIR, to illegally kill deer, elk and other big game animals.

I use one of those quite a bit. It amazing what you can find with them.

Just wondering if it picks up any moisture? My assumption is not.
I guess it would if the moisture is causing a temperature differential.
Why do you run a Big Buddy heater in your RV?

FYI Be sure to check state laws where you use these devices outside. For instance, my state of Oregon - ILLEGAL, all night vision and thermal banned.

OK, sounds like these these thermal imaging tools are not all illegal or banned in Oregon then. It's certain usage that may be.
