I said this before and I'll say it again, if star wars is going to keep telling stories in the OT period, they need to get comfortable with the idea of recasting
I reread The Living Force recently and Yaddle had a line that struck me as something very similar to what Dooku says in Tales of the Jedi about how the Jedi serve the people not the politicians. It really makes her fate so much more tragic because in another reality I could've seen her and Dooku spearheading an effort to reform the Jedi Order for the better where they're more proactive and not solely bowing to the needs of the Senate.
I think it would be cool if Legacy of Vader maybe has a scene where Anakin does reach out and try to speak to Kylo but Kylo rejects him as just some kind of Force trickery.
Some of the best Star Wars characters are played by well known actors…Liam Neeson, Christopher Lee, Alec Guinness, Carl Weathers, Pedro Pascal, Woody Harrelson and now Jude Law. So bring on Jedi or scoundrel Ryan Gosling.

Even out of context, Free Guy, staring Jodie Comer, was not "pop culture vomit". (Chris Evans is in most Ryan Reynolds movies.) You're both gonna want to watch it. Ryan Gosling and Harrison Ford in Blade Runner 2049 was excellent casting. Having them both in the Star Wars universe will be cool. Make up, wardrobe, staging, good writing, and actual acting is entertaining. "Movie Stars" take you out of the story while actual actors can play anyone. Jude Law and Liam Neeson prove it.
You have severely underestimated Free Guy - the clip you are talking about is legitimately the only moment of egregious fanservice and it’s a good laugh in context. It’s actually quite funny, lighthearted and has a surprisingly emotional story. Really encourage you to check it out because it breaks my heart to see it mischaracterised because of a couple of references.

Shawn Levy does a great job of making really silly fun movies with lots of heart, he directed The Adam Project for Netflix which was a super fun action adventure and I really enjoyed it. I'm excited to see what he brings to Star Wars, hopefully a fun, silly action adventure
Free Guy does have all pop culture references, but similar to deadpool having all the wolverine comic references, the way pop culture is used made sense for the movie. It is literally poking fun at games like fortnite and you can't do that unless you demonstrate what they are like. I would encourage you to give it a shot.

My family and I are traveling from NZ and this is our first Celebration, so I'm not sure what to expect. I've scrubbed the Celebration website as well, and all I can find is the schedule of who's appearing for autographs and photos.
Star Wars films need the Cloverfield treatment. No announcements, no news. Just a mystery trailer that drops in front of something else with no information. I remember scouring the internet for months after trying to figure out what it was.
I can't believe I haven't seen anyone talking about this, but it seems pretty clear to me that Kylo is going to be finding and fighting Verla? Charles Soule is all about interconnectivity to his other works, she seems like the obvious Order 66 survivor for him to fight.
Something I'm surprised you didn't mention with Shawn Levy is that from what I've seen (I haven't watched the series, only read up on his filmography), he's quite involved in Stranger Things, even directing several episodes. Also when Mollie mentioned the movie involving pilots or being like the Rangers show, I'm surprised neither of you mentioned Rogue Squadron, though based on how long I've heard Levy's making something I'm pretty sure he's got his own idea. I also heard about an older Rey thing for the Obaid-Chinoy movie, I wonder if both of those movies were revised to have this new era more fleshed out and still have Daisy Ridley? Assuming Levy's movie still has Rey (which I've seen claimed till). Anyway, if this movie's a thing, hopefully Celebration confirms it. The thing about the OT characters in the Filoni movie is even though I don't necessarily want to see it myself, based on how things have gone so far, I can't help but feel like Filoni is going to do it anyway. My best hope is that if so, the appearance is minimal and the OG actors (and in Carrie's case, family like Billie Lourd) remain involved, like how Mark Hamill has been in his Mando/Boba Fett appearances. Doesn't make it better, but it is slightly less bad. Best case scenario, we do just get cameos of things like the Falcon and Luke's X-wing (with I guess R2 in it to make it clear who's flying), and maybe some voice lines thrown in somewhere.

I think Luke, Leia, and Han should be in it briefly at the very least. They should do CGI (not deepfake) Luke, but bring back Alden Ehrenreich, and recast Leia.
Donald Faison was great in Scrubs. But his dance is a mix of different dances from music R&B music videos of the late 80s/early 90s and from the House Party movies.
