Maybe try our approach. When we have a club ride in the Pyrénées we start with a kind of farmer's breakfast - baguette, cheese, meats and maybe a glass of vino. With a bit of luck lunch is an extended version of the same with maybe some salads and dessert. Strangely the riding is tougher but passes by nicely.

If you’re not too exhausted at the end of each ride could you do a couple of brief interviews with other riders/mechanics/organisers/locals to give us a broader picture.
Looks wonderful out there. Have fun.

re losing the brake pad - In many years of cycling, mostly on rim brakes, I've never lost a brake pad or heard of anyone doing so. Since the complete assembly pad+holder came off, is it possible there was an error in reinstalling the wheels after shipping the bike? Perhaps fitting the tire through the gap between the pads was difficult (maybe wider tires for road conditions - gravel? - on the route in Norway?)? So, rather than deflate the tire, somebody removed one pad assembly (or both), installed the wheel, reinstalled the pad assembles finger tight, and forgot to fully tighten them? This would make sense because the derailleur makes refitting the rear wheel more difficult than the front one. Deflating the tire is a better option because it avoids the need to realign the pads.
Lucky that the problem was with your rear wheel, because more braking force is available with the front. Once I was assigned a bike (not mine) with misaligned rear rim brake pads which made a terrible squealing noise. So on that ride I didn't use the rear brake, and found using only the front rim brake perfectly adequate for descending a series of switchbacks.

That's why disc brakes are just incredibly Superior to rim brakes. Rim brakes could never match the braking power the consistency and the performance of any Hydro disc brake bike. 👌👍 of course the luddites will argue differently but... nobody pays too much attention to those silly Muppets 😁

@@JulietElliottsChannel Brake pads in rim calipers should DEFINITELY have the pad slot oriented in such a way where the pad is inserted in a direction where the rotation of the wheel when going forward pushes the pad INTO the holder rather than in a direction where the pad would be pushed out of the pad slot.

It has nothing to do with the bike. It was the brake (part of a group set that doesn't come with the frame). My fault for not checking everything was right rather than some kind of defect
