A 20-40 acre farm would be the lowest acreage for a team and one person, not the best. One person and 3 teams would be able to work a 100+ acre mixed use farm (pasture, row crops, and wood lot). The only time you would really need extra help would be harvesting hay. 1 team can plow about a acre a day, so with 3 teams, and a 2 bottom plow you would be able to plow at least 2-3 acres a day. My team was plowing when they were 2 years old, it was a small 10" single bottom walk behind plow. The ground was heavily disced before plowing, because breaking sod is very hard to do. Just go shallow with the plow. The key is to give them challenging tasks without hurting them. Training the teams to drive helps a lot, you don't have to walk beside them they can be trained to drive like horses. These things have been done historically so I'm not pulling these numbers out of thin air. One thing he didn't say is that an old worn out ox tastes much better than an old worn out tractor. Historically oxen were eaten after they were to old to work.
