I have a psychology degree and took a few graphic design courses. I really want to pursue UX/UI/UXR but AI and the current market has me a little discouraged

Understandable, check out vaexprience's podcast from a couple of weeks ago with Dr. Nick Fine, it is really helpful. Maybe you can gain a different perspective on how to approach the 'current' market.
