As a young like cook, I worked in a lot of poorly run restaurants. I didn't know that at the time because bad kitchen stereotypes are so built into many people's understandings of the culinary world and how it works. Loud, crazy, aggressive, messy, intense. All things that are perceived about restaurants. The way that you approach food and service is the right way. I appreciate people like you who break this bad stereotype and show people that when you set yourself up for success, both in Mis en Place, and within yourself, service should be a calm dance, a harmony. So sick to see you on this journey!

The “grindset” attitude has become so popular but I think a lot of people don’t realize that the real fulfillment of grinding your ass off comes to you when you’re able to navigate the challenges with a team and then celebrate the wins with one another. It’s a compliment to your character that you actually made sure to have the proper amount/emergency order more ingredients for dishes. I’ve heard some “pop-up’s” that just cross it off the menu when the ingredients run out and the guest gets a “tough luck” experience.
