    I've done this before with the Slow N Sear but I keep my grate handles 90* from the sear area. that way i don't have to spin from over it but from the side. Think about it...

    I bet this would work well with sous vide steaks also.. just get to searing temp and spin the grate!

    T-Roy: what was the seasoning used after applying oil? Was it pepper? After that shot, the steaks on the grill for the sear looked like they had additional salt on them?

    Steaks look great Troy.....so essentially you can substitute the slow and sear by banking all your charcoal to one side or fill one of the Weber baskets that come with the kettle.

      Yes, you could definitely use this technique without all the gadgets. The method does work out great on steaks. I'm curious to see how it works with Pork steaks as Elton's BBQ-pit asked? We shall see!!! Thanks for watching Junior!!

    I agree 100% that this method is the perfect way to sear a steak! Best steak I have made has come from a kettle with the easy spin and cold grate technique! I'm Glad you got to not just experience it but learn from the master himself. Great video T-Roy.

    Great video T Roy! I can vouch for that technique as well. I am a true believer! Dave does make it look really easy. There is a bit of timing involved. As you can see, this makes a perfect steak!!! Thanks for sharing this. When I see all of you guys together, I get a bit jealous. I will meet you guys one day soon!     Do you have to air dry for six hours? It seems like they would dry off during the initial low temp cooking time.

    I have the Slow N Sear Plus, and have used this technique on sous vide steaks. I never did the olive oil coating before. I may have to try that.

    Awesome Video, Troy did you get the meat flippers that I sent you? Great tool for flipping steaks by just grabbing the edge of the steak and flipping. I use them for everything, bacon, chicken, steaks, veggies that I am grilling or cooking. I can't wait to come visit you soon. We just got a vehicle that is road worthy and now we can travel.

      I can't remember, but I think it was 20-30 mins and then another 15-20 to get to 115F. I appreciate you watching and thanks for the question!!

    Hi, mister Troy just a question but what prep was done on the steaks and what kind were they you said aged prime I think but aged, brined, etc.......?

      The steaks were dry-aged for 6 weeks. We did a dry brine with Kosher salt overnight in a baggie, then put the steaks on a cake cooling rack and let sit to air dry in the fridge for 4-6 hrs before we began the reverse sear. Hope that helps! Thanks for watching!

    This is quite a common technique here in the UK I imagine - I used to do this with burgers, steaks and chops before I got cast iron grill grates. Also very common to do this technique with sausages, ribs and chicken for a slower cook. A couple of my friends and relatives such as my dad and some of his friends and my uncle cook on cold grates as well.

    I am a female and i am learning so much from watching yours and few favorites videos on how bbq etc. My question on your easy spin grate video you used a salt brine steak for 15 hours. Did you wash off the salt then let it air dry for six hours before cooking? Also i can't find the professional bricquetes. What else can i use? Can i add wood chips for added flavor during the indirect cooking portion?

    Hi Troy, I see that y'all ran the probes through the vent holes. Have you had any problems with pinching or air leaks when running the thermoworks smoke probes in between the lid instead of the vent holes?

      Hey Jonathan, I have not noticed any pinching problems, but the air gap does cause the Kettle to run hotter, so you'll need to close down the upper/lower vents to compensate for the air gap. Thanks for watching!!!

    Loved the vid! Just one question though, i have owned a couple of grills, by char broil, and they haven't really treated me the best, one kept flaring up and the other just rusted over a period of like a couple of years. What grill do you absolutely recommend. Btw i have been looking into buying a komodo grill, just not sure if its worth the $400.

    I really like this technique and i've had success with it. I wish there was a way to duplicate this method/results when cooking several steaks at once! Has anyone tried this with lump charcoal???

    Looks amazing Troy and Dave. Did you salt the steak again after the overnight Dry Brine? Unless I missed something, I only saw Dave put pepper on the steak.

      We did not re-salt the steaks. After drying them with paper towels, we only put olive oil and black pepper on them.

    Very nice sear on those steaks T-Roy. I'm not into medium rare steaks but wouldn't mind taking a bite of that!! And cool to see the gang all together too!! Keep it up buddy!! And on a personal note, be safe out there with everything going on in your area.

      I wouldn't mind tasting that either. But FWIW those were NOT medium rare. Medium at best or else his camera wasn't doing a good job with colors.

    I already knew how delicious that steak was gonna be. Since I tried the cold grate technique, I can't go back to any other method. Now I need the new grate and that fancy blow dryer😂It works great without the blow dryer but I'm sure it's even better with it. Loved seeing all of y'all together. Thanks for sharing😃

      Hey Booger, we actually had 4 ribeyes, but saved 2 for a backup in case the 1st take went horribly wrong. Luckily, the 1st take worked out very well and we cooked the 2nd steaks after we shut down the cameras. LOL It's always nice to have a backup plan! See ya soon mah sista!!
