  • Sattu Paratha Recipe
    Ingredients:
    - 2 cups whole wheat flour
    - 2 cups sattu (roasted gram flour)
    - 1 medium onion, finely chopped
    - 2 green chilies, finely chopped
    - 1 tsp ginger, chopped
    - 1 tsp garlic, minced
    - 1 tsp ajwain (carom seeds)
    - 1 tsp cumin seeds
    - 2 tbsp mustard oil
    - Salt to taste
    - Fresh coriander leaves, chopped
    - Lemon juice (optional)
    - 1 tbsp mango pickle
    - Water for kneading
    - Ghee or oil for cooking
    Instructions:
    1. **Prepare the dough**: In a large bowl, mix wheat flour with a pinch of salt and water. Knead into a soft dough and set aside to rest for 15-20 minutes.
    2. **Prepare the sattu stuffing**:
    - In a separate bowl, combine sattu, finely chopped onions, green chilies, ginger, garlic, ajwain, cumin seeds, chopped coriander leaves, salt, and mustard oil. Mix well.
    - You can add a bit of lemon juice and mango pickle for extra tanginess .
    3. **Assembling the paratha**:
    - Take a small portion of dough and roll it into a ball. Flatten it slightly.
    - Place 1-2 tablespoons of sattu filling in the center of the dough.
    - Gather the edges and seal it well, ensuring the stuffing doesn’t come out.
    - Gently roll it into a flat paratha with a rolling pin.
    4. **Cooking**:
    - Heat a tawa or skillet on medium heat.
    - Place the rolled paratha on the hot tawa and cook on both sides until golden brown, applying ghee or oil.
    - Serve hot with chutney, yogurt, or achar (pickle).

    - Drizzle mustard oil over the mixture for a distinct flavor.
    - Add salt to taste and freshly chopped coriander leaves.
    3. **Serving**:
    - Mix everything well and adjust the seasoning as per taste.
    - Serve the chokha with sattu paratha or litti for an authentic village meal.
